Everybody likes Laab! Thai and Lao call it the same thing, since the languages are very similar. Since you have an outdoor kitchen, take your pepper flakes outside and toast them over medium low heat in a dry skillet the way you did your sticky rice Stand with the breeze to your back! ;-) You don't want the fumes to come back at you. Keep them moving until they turn a kind of a reddish brown color. Process in a grinder or mortar and pestle. The nuttiness of them is more authentic. Try it! Yum!

Galangal is apart of the ginger family and looks like a root. It grows underground and ginger is not a substitute for it(the taste is not similar). You can google an image as well.

Hi Bethany! This dish can be served either as a main dish(eaten alone) or eaten as a side dish(with rice or other items). I would consider the way I prepared it more Laos or even Cambodian. This dish comes in many forms and my understanding is, it's very similar to a Hmong dish as well! You should be able to find the ingredients at a Korean store too. :)

this is more Lao larb. Thai does not use pla padek (pla la)---btw love this way of making larb since i am weak with this type of food. thanks!

its simular to hmong laab but we dont use lime leaf or galangal. its just the basic lemongrass, mint, onion and shallot, lime or lemon, lots of fresh thai chilies, cilantro, fresh basil, salt, msg, and sometimes if their really brave we also use chicken or beef stomach juice instead of stinky fish or crab sauce. and we dont incorporate fish sauce in it either, but laab is laab and its good either way!! if you make it with seafood and omit all the stinky stuff and add cucumber and tamarind past

There is a great channel I am subbed to called bernymac20. It is a son who acts as translator and his mother (She is so cute!) who does the cooking and describes what she is doing in Cambodian language. Check it out. There are some great recipes there. Also, check out Annie at hmongfood. She is another amazing cook. I think you would enjoy both channels immensely. Michael

I believe the cuisines of Southeast Asian heritage are the very best! They have a unique blend of Indian, Chinese and local ingredients to create dishes which are so unique and remarkable. I am a "foodie", and I love to explore food channels. Recommend you go see nanaks801. She cooks Lao food, and often speaks in a kind of Lao-English mix. Since you already know the ingredients, you will understand her creations.

Not just any lime tree, sir. They must be the Kafir Lime. Ordinary lime leaves are very acrid, and will ruin a dish. How do I know this? In the absence of kafir Lime, I tried to substitute, and ended up throwing the whole dish away.
