      I am an archbishop of the Orthodox Catholic Church. I was in Vietnam during the war with a group of Orthodox Catholic monks. I fell in love with southeast Asian food and today, at 78 years old, my main diet consists of mostly Vietnamese, Thai, Lao and Cambodian food. They are all so tasty and healthy.

    I think the key to this recipe is not too much mint. Mint is strong and can easily overpower the other flavours.

      +Daniel Grace true, it is only sprinkled on top. More is normally provided at the side together with other herbs and vegetables, to provide a contrast as desired.

      ถูกต้อง เนื้อติดมันหน่อย เวลาย่างไฟต้องแรงให้ด้านนอกสุกเร็วๆ ไหม้นิดๆพอหอม แต่ข้างในยังแดงอยู่ อย่าพลิกไปพลิกมาบ่อย ย่างให้ด้านนึงสุกหอมไหม้นิดๆแล้วพลิกไปอีกด้าน เนื้อมันจึงยังชุ่มน้ำ ไม่แห้งเพราะพลิกบ่อย เวลาหั่นน้ำจะไหลออกมา เขาถึงเรียกน้ำตก ข้าวคั่วๆให้เกรียมอีกหน่อยจะดีมาก มันจะหอมและมีรสขมนิดๆ ข้าวคั่วที่คุณมาร์คใส่ไปนั้น คนอีสานเขาว่าคั่วไม่เป็น ขาวคือขี้แข่ว มันไม่หอม ได้แค่รสสัมผัสกรุบๆเวลาเคี้ยวค่ะ

    I have prepared your recipe exactly like you and it's incredible. Full of flavour and delicious. The only extra ingredients I added was a bunch of cilantro and some lemon grass in the marinade (but only because I love fresh herbs). Thank you for the recipe.

    Great thing with this dish is that you can use a cheap cut like skirt steak and get the same results as you would with an expensive cut like ribeye.

    I actually made Nam Tok Pork, just using pork chops cooked on a cast iron grill... it still tasted great. I wish I had a charcoal grill.

    I'm with you about more rare beef. I've almost got my wife converted. She loves the flavor of medium-rare but hates the "blood".
    I hat this recipe at a friend's restaurant here in NOLA. The cook has only been here for about a year and she grew up in a family of little hole in the wall restaurants that you seem to frequent so often. I LOVE the texture that rice makes. While I loved the flavor, I can't imaging liking it as much as WITH the rice.
    Btw, did you get any tips/tricks about how to make the gaeng hunglay from Mae Hae? It looked like it was amazing even by your standards and I'd love to see a video about it.

      Bobby B Hey Bobby, yah, it was unfortunately I overcooked the beef, I like it much rarer too! I didn't get the recipe for the gaeng hunglay, but I might try to get it somehow, it was incredibly good.

    The Thai lady where I eat uses plenty of garlic and cilantro along with the chili and lime in hers. It is my favorite dish.

    Looks great. So many chilli flakes though. I would probably have to stick to just a teaspoon. I would cook the beef a little less too.
    The ground sticky rice is interesting. I would have thought it would be hard to digest. I saw another recipe for Laab Meatballs which had ground sticky rice. I guess it's fine then.
    I will have to try and make this sometime. Shame beef is so expensive in the UK. I think that amount would cost £15 or so here. Might have to try with pork instead although I think beef would work better.

And learned how to be a great home cook in real life & teach it online. That's what most of us want, and is why we all love his channel.     Thanks Mark! Looks D-lish! Did you get the beef from the morning market (is it safe there?) or a supermarket (like in lampang?)
    I notice the uncooked chicken and pork were sitting out with no ice at the market. Is the meat fresh daily / any dangers to look out for buying meat? Thanks!

      terry palmore Hi Terry, I got this beef from a supermarket, but typically get all my meat from the market. They often pour ice over the meat and it slowly melts. Most of the time it's fine, but you can kind of check to see how fresh it is before you buy. I've never had a problem.
