I know you didn't intend it, but this is an awesome looking healthy diabetic meal! Thanks for the inspiration! I'm always looking for ideas that are healthy for me and my family will enjoy also. I will substitute a can of Chic Peas for the potatoes, and suggest that to any other diabetics. It's also wonderful that you cook from scratch! Not mixes, canned premade ingredients, ect. Whole, real, healthy, and delicious!

I tried this. You need to cook the potatoes a lot longer. Or cut them up super Small...like .5 inch squares. Also u doubled the recipe and let me tell you, you dont need 4+ pounds of chicken. .5 pound per person is good enough. I would personally say that i followed what this video said to a T and i would give this meal a 6/10.

Use cauliflower. No flour on chicken.
