Southern Thai dry chili pork ribs curry (แกงคั่วพริกซี่โครงหมู) is a recipe that my Thai mother in law makes frequently for me in Thailand, and so today I’m exciting to share this authentic Thai recipe with you!
This is a Thai curry recipe, and it really focuses on dry red chilies for much of the flavor, without using any coconut milk. It’s common in Thailand to make this recipe with pork ribs, or any other kind of meat, it also works well with chicken. This is a southern Thai curry that you’ll find eaten throughout Bangkok at southern Thai restaurants, and throughout the south of Thailand.
Here are the ingredients you’ll need for this recipe:
(Again, you can get more details about how to make this recipe on the blog post: www.eatingthai...)
For the curry:
1 kg. pork ribs, or meat of choice (ซี่โครงหมู)
6 - 8 tbsp. curry paste - ingredients below (เครื่องแกงเผ็ด)
10 kaffir lime leaves (ใบมะกรูด)
2 - 4 cups of water (น้ำเปล่า) - start with 2 cups and add more as needed
About 1 tsp. salt, or salt to taste (เกลือ)
For the curry paste:
50 grams Thai dry bird's eye chilies - that's about 1 big handful (พริกชี้ฟ้าแห้ง)
7 cloves garlic (กระเทียม)
3 shallots (หอมแดง)
1 coriander root (รากผักชี)
2 thumbs sized chunks of turmeric (ขมิ้น)
1 stalk lemongrass (ตะไคร้)
1 thumb sized chunk of old galangal (ข่า)
1 tbsp. black peppercorns (พริกไทยดำ)
1 tsp. cumin seeds (ยี่หร่า)
1 tsp. coriander seeds (ลูกผักชี)
1 tsp. salt (เกลือ)
1.5 tbsp shrimp paste (กะปิ)
The basic steps of making this southern Thai dry chili pork ribs curry (วิธีทำ แกงคั่วพริกซี่โครงหมู) is to first pound all the ingredients for the curry paste, then boil it with water together with the pork ribs. The majority of the work you have to do is in preparing the curry paste. Then it’s just a matter of boiling it with the meat until the meat is tender.
Hope you enjoy this authentic Thai recipe and let me know if you try it out or if you have any other questions!

I cooked this recipe last night and it has become my favorite dish now. It is lip-burning hot but I can't stop eating. I can't explain the taste and goodness of it in words other than just amazing. I made the paste enough for two meals and froze 1/2 for the next time. I can't wait. Thank you, Mark, for sharing this recipe.
Decrease amount of chilli, my mom alway do this dish with less chilli because I can't handle spicy and the taste still awesome
@@dueyduey1611 that's not the way, coward reject mild return to spice
We literally watched this an hour after you posted it and my husband went out and grabbed pork ribs. The only thing I was missing was the coriander root, but it came out delicious! Thank you mark and mama!

Your joy and excitement over the process and the food makes me so happy! Thai is my favorite type of food--thanks to your mother in law for sharing her wisdom and expertise with everyone.
What a great way to clear out all the pork ribs we have accumulating in our freezer! And just when the wife and I were raving over the curry we just had for dinner, ha! Such a timely find, but more importantly, what a blessing to have you share a part of home Thai cuisine with us. Thanks so much Mark! Hope you and your family are doing well.:)
I am so thankful that you are sharing your food and travel experiences. I am becoming a better cook (and less stressed) and a more appreciative person. That you cook from the basic ingredients and not pre-mixed spices is important to bring out the true, bright flavors (and nutrition). Thanks Mark!
Love seeing your Mom in law cook. Thanks for sharing her expertise with us 🙏
I don't usually write reviews, I mainly just view your videos but after viewing a few, you've encouraged me to sign up so I can finally make a comment! Thanks for being always so positive and happy on ALL of your videos. I always look forward to watching more of them.

Hi Mark your mother in law is an amazing cook, the video quality is superb, I know that taste good. Pounding that curry paste looks like a workout, cheers from "The Bahamas".
Thank you very much Keeno!
Didn't know I would say this, but appreciating food is an art. You go all around the world and manage to find some food you love from there. That's inspiring !!
I will sell at my special menu for next week in my cafe
Greetings from Singapore 🇸🇬
That's cuisine, that's art, that's life, that's culture. I enjoyed every moment in this video. A great regional and family recipe. Once again, you do not need a high-tech kitchen to create fantastic food. You just need someone with the knowledge and the passion. Reminds me so much of my grands mothers. I will try this curry today (I confess I will use the grinder and will put less chillies) and when I eat it I will feel like sitting in the countryside in Thailand on a bambu fence with the sun adding a bit of heat to the chillies. Thank you for sharing, big hug to your mother-in-law!!
Mark's enthusiasm for food is a real motivation
Thanks Mark for all these videos of Thai AUTHENTIC cooking. I am Thai and appreciate you videos!

- OMG, that's a LOT of chili's 😳.
I feel like if I ate that, my lips would fall off 🙃
At least for 'Part 1' you can drink some milk/water to tone down the burn, for 'Part 2' you are helpless.
- 😂
- 😱
+Just happened to walk by haha haha it's really true.
just reduce the quantity of chillis man
Review!
I actually followed this recipe and my goddddd it was so good! My mom used to cook this for me all the time. But since I moved out, I have to cook for myself. My mom is also from southern Thailand. Southern Thai food is the best!
My Mouth is watering..😃..it looks so tasty..you really like spicy food Mark same like me😃👍👍
Mama is one heck of a cook...Mark is so good at narrating that I could almost taste it.
amazing....ill sure try it ! but was Micah playing with his grandma and his powder !? 😁
Honey Bear i think is a cool powder. Thailand is really hot.
Kshatriya I thought it was baby powder !! 😂
yup for sure it's cooling powder. I liked using it whenever I visit Thailand.. very tingly feeling that feels refreshing.
I think it's wonderful that you are replaying these so that people know that you can cook. ❤
Pro tip: Do NOT cook this inside your house else the shrimp paste smell lingers in your house for days. XD
Nice vid mark
Haha, good tip!
But if you love shrimp paste like me.. you wouldn’t mind the lingering smell 😊

It's not authentic my we from Thailand and my 88 old granny said its more off boiled instead the paste should have been fried in oil first
Rica Rocha
I agree that her method was quite different from what most Thais would do. But I think the end result is not too different in term of taste.
In my opinion, authenticity is not judged by boiling or frying curry paste alone. There are more to it. And to my Thai eyes, this curry looks authentic.
cHemon
Yes it's authentic is DIFFRENT and yes it's more boiled then properly cooked
Rica Rocha
Sorry I don't understand your English.
cHemon
Sorry it's American English
Rica Rocha
Oh. I'm fluent in American English actually.
