I did a Rust-Oleum paint job on my XJ Cherokee. Two tone kona brown and white. But i sanded it down to bare metal/factory primer. 320 grit. Primer, 2-3 coats. Sand to 400 grit. 3-4 coats paint. I used the Rust-Oleum ultimate clear coat which is UV resistant. Another 3 coats. Wet sand to 2000 and polish and wax. Its very important to do this in the shade. I did this over 2 years ago and still looks great today.
Did you degrease the surface at all? With alcohol or anything? Just curious. When you said you started to apply clearcoat that it statted "orange peeling" i assume it was actually lifting, which means either the clear coat wasnt compatible or there was wax or grease left behind.
I was gonna use rubbing alcohol to do that but I didn't need to after sanding the whole surface and then washing it with dawn soap which degreases. I had no problems with the paint bonding
@HanzelFonferek I was just curious is all. In my experience, sanding and washing with dawn, which I also use wasn't enough. Car wax gets deep into the and even more so with sanding. I personally don't see any need to add clearcoat to the paint you used bc its already gloss and you did a good job of putting it down. Sanding and buffing it will make it look like clearcoat or close to it. But something was causing a reaction when you did the roof with clearcoat, either paint type or contamination.

If you did decide to clear coat it, what type of paint would be compatible with Rustoleum?
Rust-Oleum clear would probably work

You only needed to prime plastic and bare metal lol.
The primer fills in any imperfections as well as making the paint adhere better
