- Persian Love cake | Love cake recipe
Ingredients:
All purpose flour ( Maida)-1 cup ( 130 g)
Almond powder-1/2 cup (50 g)
Sugar-1/2 cup (100 g)
Egg-2 large ( at room temperature)
Unsalted butter-115 g
Baking powder-1 teaspoon
Rose water-2 teaspoon
Salt-1/8 teaspoon
Cardamom powder-3/4 teaspoon
Milk-1/2 cup (120 ml)
Saffron -10-12 strands ( this is optional. But it gives nice colour and fragrance to the cake)
For the glaze:
Icing sugar-1&1/4 cup
Lemon juice-2 teaspoon
Water-1-2 tablespoon ( Add little by little and mix until you get a smooth and thick mixture)
Method:
1. Soak the saffron in warm milk for 15-20 minutes.
2. Mix the flour, Almond powder, salt and baking powder and keep aside.
3. Beat the butter and sugar on medium speed for 5-8 minutes/ until light and fluffy.
4. Add the eggs one at a time and whisk well after each addition.
5. Add rose water, and mix until just incorporated.
6. Add the flour mix and incorporate.
7. Add the milk in 2 addition and whisk until incorporated.
8. Pour the batter into a 6 inch pan .
9. Bake it in a preheated ( 170C for 10 minutes) oven at 170C for 40-45 minutes.
10. Let it cool completely before you spread the glaze.
11. Spread the glaze over the cake and decorate with rose petals and pistachios.
