您好,麵團可以分小一些份量的,烘烤可能會需要縮短幾分鐘,溫度可以一樣或著降低5°C這樣,每家烤箱脾氣不同,最主要看麵包皮色來決定。皮色淺棕色就比較合適。🥰💕

您好,蘇打粉可以讓酥皮遇熱後膨脹,如果沒有也可以省略,酥皮也會酥脆的,但酥皮膨脹裂開花口沒有那麼大

請問您用什麼牌子的發酵粉?
您好,我現在用的是加拿大買的Fleischmann’s instant yeast,之前用的是Bruggeman布魯曼instant yeast酵母(這個酵母非常棒,幾乎完全沒有酵母味道),總體來說各種牌子的酵母應該都不錯。
最重要注意酵母的保存,以保持酵母活性。買回來的酵母開袋使用後,密封冷凍或著冷藏保存,這樣能比較好的保存酵母活性。切忌開袋室溫保存,否則一個月後酵母活性幾乎散失。
老師按著你的方法作的波蘿麵包真好吃😋!但似乎是最近我們這太熱了!上面包的波蘿皮就會沾黏在保鮮膜上?等蓋到面包時多少都會拖落一些?我還拿去冷藏一下似乎也沒有改善😂

菠蘿皮油性遇到天氣熱會比較容易軟,您可以嘗試提前做好菠蘿皮,密封好放入冰箱多冷藏一下,20分鐘到半小時左右會效果更好些,如果時間太緊也可以冷凍10分鐘,取出來現做現包,這樣也好的。

高筋麵粉可以換做中筋麵粉的,因為一般高筋麵粉吸水能力比中筋麵粉高,可以預留10~20克牛奶量稍後看麵團狀態決定是否加入。
沒有奶粉就用中筋麵粉或低筋麵粉都可以🥰💕

中筋麵粉的麵包做出來口感比較鬆軟,也很蓬鬆,高度稍微比高筋麵粉的麵包低一些。
高筋麵粉做出來的麵包高度比較高,更加輕盈,也柔軟,但口感比較韌一些。
兩種麵粉都可以做麵包,看個人喜好。
在我的選擇來說,因為中筋麵粉的麵包麵團整型搓條或著擀卷時,不像高筋麵粉的容易回縮,這類型麵包更喜歡採用用中筋麵粉。
當然高筋麵粉做此類麵包也完全可以,只是鬆弛時間要適當延長一些。
另外比如小餐包,就看個人喜歡。喜歡鬆軟的就可以用中筋麵粉,喜歡韌口的用高筋麵粉,都可以切換。🥰💗
