If one has a smaller bologna log diameter, or a larger mother's metal wire mesh potato french fry cutter - one can make smaller bologna blooms, for greater meat crusting.
Putting the bologna bloom atop a small overturned custard glass dish, the bloom falls open that can then be easily marinated and painted with all kinds of good sauces. Putting some creamy horseradish in that German-style whole mustard seed, with a little honey, pinch of real sea salt, .. you get a hot hustard sauce ... while pineapple, apple cider vinegar (ACV), little honey, with a dash of soy sauce, and you have a real teriyaki sauce all over that bloomer.
So here is Jeff with his smoking "bloomers" showing .... hahahahaha

if you used a longer knife you could put a dowel down that is thick enough for the height you want to stop the cut at... one in the front and one in the back of the cuts. part of me wants to use a wire cutting plate... thou i can't find the design i'd use on google after doing a search...LOL... basically a criss crossing wire plate, to simply press down on what you want to cut... where you could adjust the height of the end of the cut. thou i don't know if the temp of the meat would need to be cooler or if room temp would be ok?

Can you make it in the oven? if so how would you do it?
I don't use an oven, but don't see why not. I would place it on a wire wrack on top of a sheet pan. Don't want anything dripping down on the burner. Same temp as the video.
2 and a 1/2 inches thick? Bro it's well over that lol
I got out a ruler and measured for you. Still have half of it in the frig. It is just barely under 2.5 inches.
My eye ballin is off then lol. Thing looked easily 4 from my sight.
