Short answer: *Both* Link used to be a leftie but they changed it to right for motion controls because most people are right handed (I did not watch the video before commenting this)
Left-handed-at-birth people are more likely to be ambidextrous than right-handed-at-birth people are, due to the world being designed for the latter. While we cannot say with certainty that this is true for Hylians like it is for real life, we can make a safe guess that this is true since the vast majority of NPCs in the Zelda series seem to be right-handed. Much like your point about how formally-trained knights, even if they're left-handed at birth, would be trained in right-handed maneuvers in order to better synergize with the rest of their unit, a person who is left-handed at birth IRL tends to learn ambidexterity over time to better synergize with the rest of the world around them. On top of this, the reincarnation cycle for the Zelda series can also help explain things. Each Link (except the ones in the Wind Waker timeline) has the same *spirit of the hero* but they all have their own personalities and reasons for embarking on the quest, thus they are definitively different people (except when a game explicitly says it's the same as a previous game). Each one can have its own answer to handedness. The original hero that the spirit comes from (is this Skyward Sword, or the hero from before Skyward Sword?) was probably left-handed-at-birth, and influences those that it inhabits in that direction (leading to higher statistical odds of left-handedness than in the general population), but it cannot completely override the natural genetics unless they are already near ambidextrous. And even if the spirit of the hero does not directly influence the handedness of those it inhabits, it's fair to say that as a genetic minority among Hylians, someone who is left-handed is more likely to display courage (and thus attract the spirit of the hero) than someone whom the world is built for. Which definitely explains WW Link still displaying left-handedness even without the spirit existing in his timeline, even if the previous paragraph is your justification for the other Links.

And why'd you start the diving minigame and not play it? Did Zora's Domain itself tell you to climb that ladder only to backflip and go deep without silver or gold scale? WHAT DID THE BEEHIVE EVER DO TO YOU? HIDE RUPEES?
