The donut tutorial was not meant to be a quick way to make a donut cuz there's a ton of ways you could model one, it's more of a basic introduction to everything Blender have to offer. The guy basically use it guide us on a tour around the software so that we have the basic knowledge of which is what and start our learning journey easier. I finished it and by now I could listen to the tutorial in the background and click on things myself, so yeah, you're missing out the basics by skipping the donut tutorial.

I did the donut first, then came here. Wish I came here earlier because this was sooo much more fun. Donut looks pretty and stuff but it was so complicated that if i try to remember what i did there, i probably cannot. But i can remember so many things i did here.

I've tried so many tutorials and guides to transition into blender from Maya and these tutorials are the only thing that has actually helped me and I've been able to follow along and get the hang of what does what, and simple efficient work flows that are more to my liking as well as keeping things in quads. So, thank you!

I like watching these beginner tutorials because I pick up the most random bits of super helpful knowledge. I've been using blender for almost a year now and I never knew that selecting verts and Shift+Alt+S would let me make a perfect vert circle. That and everything to do with the mean weighting are things I've never sen done before.

If at 1:59 your original cylincer in edit mode is without modifiers you can try going on object mode (with the cylinder selected) CTRL+A --> apply all modifiers. If this doesn't work ( error multi data user) you can go on the object data proprieties on the right (it's the green triangle with dots as vertex) and click on the numer next to the name of the mesh, in this case Cylinder.00x. Doing that make the mesh a single data user (I don't know what that means but works). Later on the tutorial same thing for plant's parts, select them one by one in object mode and make it single user like I said before
