I just got an old country wrangler and shipping was a disaster from academy sports, just cut off baffle added stack extension insulated firebox Warning it's extremely difficult to pry baffle off on wrangler they added a welded line to prevent baffle from sliding out , I still did it but need giant pry bar
Yes I think that is an accurate test when cooking biscuits you do have to keep an eye on them

How about the center of the grate temperature? Looks like the biscuits and temp probes are off to the edges of the smoker.
How do I get one ?
Is this an accurate test with the lid opened and closed so often? Would be a good idea to repeat the test but not open the lid for 20 or 30 minutes?
