I always run the vegetables (in this case, onions) and liquids through a blender to puree. It adds tons of flavor to your gravy. It's a little cloudy, but I'm after flavor and not to 'waste' food.
Most scientists recommend 165 Fahrenheit as the safe internal temp for turkey. PS, this looks incredible! My mouth was watering watching this. I can't wait to make it!!

I made a marinade of your spice mix with a quarter cup of yogurt, the juice of a lemon and half a red onion, diced. Delicious!

I've been making a Korma style carrot side dish for the past 20 years or so. The creamy sauce is great on turkey.
Wow, that looks so good - and importantly, entirely doable for us non-chefs.
How about hitting the sauce with an immersion blender: keep the onions but have a silky sauce. Win-win!
