Dashi is the soul of Japanese cooking. without that, we cannot cook Japanese food. Hope you kind of get idea of it. I will share some recipes that used with these Dashi soon!
    This is the video showing the process of making Katsuobushi

    This is the Kayanoya site in the US. You can buy them on online but if you go to Japan, try to go to a store. You can try all these dashi. It will be an amazing experience. I usually go to the one in Roppongi Midtown, Tokyo.

    If anyone is interested, the difference between kombu/konbu, kombu is Chinese origin, konbu is Japanese origin.

    Very interesting!! I live in Tucson, AZ and we only have very few Japanese, Chinese and Taiwan restaurants that are authentic. So, I'm trying to learn how to make my own stuff here at home but Japanese, Chinese, and Taiwan food is so hard to make since there seems to be so many steps.

      Hello Ashley! Thank you for your message. Sorry for the way, way belated respond... Japanese cooking base is a bit different from Chinese & Taiwanese cooking so please keep watching my videos ( I am taking a bit of break now...) so you will understand the basic Japanese cooking :) More than you think, Japanese cooking is easy! Nowadays, you can buy most of Japanese ingredients on online so will share the links in the future!

    Hi you give us a very good information I recently knowing more about japanese cooking and ingredients so I order some of Japanese ingredients from online I just want to know how to make dashi with kombu and shitake mashroom ? Thanks 😊

    • @itadakimasu_by_hiromi7139
      @itadakimasu_by_hiromi7139  21 день назад

      Hi there! Same thing. You can put kombu and shitake mushroom in water. Maybe you can make konbu dashi first then let it cool, then add mushroom to infuse it. You can play with that. That's the fun part of cooking right? But only thing I need to mention is shitake mushroom dashi is pretty strong so it may kill kombu flavor.

      @@itadakimasu_by_hiromi7139 yes you are right cooking is fun....ohhh that I don't know so should I make kombu and shitake dashi? Or make it with just one ingredient as you say shitake is very strong ☺️ please make more vedio about is so will know more about this cuisine thanks ☺️

      @@nadimbhari3762 No, some chefs combine these two to make a stock, up to what they are cooking. I personally haven't done that. I am taking a bit of break since my full time work is a bit busy but def. planning to get back to it. Stay tune :)

  • @vaporz109

    Is it possible to combine all four ingredients? Do the flavors clash?

    • @itadakimasu_by_hiromi7139
      @itadakimasu_by_hiromi7139  6 месяцев назад

      Happy New Year! Yes, def. you can. You can try individual and see how it taste. Shiitake is pretty strong so it may kill other flavor but we use all together sometimes. It's depends on a dish you make. I am taking a pause to post videos now but one day soon, I will show what and how I use them!
