    - Preformed vitamin A in animal sources more readily absorbed than beta-carotene from plant sources
    - Liver, eggs, and butter contain vitamin A
    - Caution needed in consuming foods with vitamin A, especially liver and cod liver oil.- Some emulsifiers, like soy lecithin, are commonly added to foods to wrap up vitamin A for digestion.
    - Beef liver contains a high amount of vitamin A, around 614 micrograms for four ounces.
    - Excessive consumption of vitamin A can lead to toxicity, and even organ meats like liver and kidneys can be problematic.
    - Vitamin A toxicity can result in various symptoms, including gastrointestinal issues, skin problems, cognitive difficulties, and more.
    - Beta-carotene, found in vegetables like carrots and sweet potatoes, can contribute to skin issues when consumed in excess.
    - The interviewee follows a unique diet, mainly consisting of beef, bison, white rice, brown rice, black beans, salt, and coffee, to eliminate vitamin A entirely.
    - Detoxification effects may lead to temporary health improvements but can also result in a rebound effect due to increased vitamin A serum levels.
    - Dietary fiber, fat, and salt can help remove excess vitamin A and reduce reabsorption from bile.
    - A natural experiment in the carnivore community involves muscle meat eaters and those consuming organ meats, offering insights into the effects of vitamin A intake.
    - LDL cholesterol is a key biomarker for health.
    - LDL cholesterol is affected by vitamin A levels in the liver.
    - Debate in the cardiovascular community about the significance of LDL cholesterol.

    - Predictions about LDL levels in carnivore diets.
    - Muscle meat carnivore diets may lower LDL, while muscle meat + liver diets could increase it.
    - People in the community are sharing their cholesterol numbers.
    - A concern that over-supplementation with liver could lead to vitamin A toxicity.
    - Suggested that natural farm sources of butter may have lower vitamin A.

    - Excessive consumption of animal products high in vitamin A might lead to health issues.
    - The interview suggests considering limiting the consumption of foods rich in vitamin A.
    - Vitamin D supplements may contain a potentially toxic form and should be approached with caution.
    - Exposure to sunlight can provide natural vitamin D.

Out of sheer curiosity I had a look at this gentleman's website to see what prompted him to conclude he was suffering with vitamin A toxicity. His elimination diet coincidentally is also a very low plant-toxin diet, essentially a beef and rice diet. There are too many people to count who have reversed their skin issues and/or autoimmune issues by limiting plant foods, but it's got nothing to do with vitamin A content, and everything to do with cutting out oxalates/salicylates/histamines/phytates/lectins/phenols etc etc. I think for this chap probably solanine in the nightshade family was a big culprit but it could have been a combination. He never even ate liver and caucasian people in particular are very poor carotenoid-converters. If anything, his symptoms sounded like significant nutrient deficiencies including but not limited to zinc and vitamin A, and reducing the metabolic burden of metabolising lots of plant foods has brought him relief, along with reducing copper in the diet. It has absolutely nothing whatsoever to do with vitamin A. This reminds me of when Ancel Keys determined that saturated fat was the devil based off of terrible data and interpretation.

Hi Judy. Very interesting video. This is not a new concept. In the 1980’s organ meat consumption was discouraged because of this very reason. An important fact I learned from Dr. Paul Mason regarding LDL cholesterol is that if a person is not weight stable ( in weight loss mode) his/her LDL will increase dramatically. Mine did just that. I have been trying to start a Keto/Carnivore diet as I am trying to eliminate/start different foods to help stop seizures started in 2005 after numerous blows to the head by my x partner in 2004. I stopped the epilepsy meds in 2012 as they were not working or had terrible s/effects & suffer 0-5 seizures every month around the same time as my hormonal change, I am 60 & its still the same. I had a bad fall June 2022 so stopped alcohol & various foods while researching Keto, saw a Naturopath last Sept who started me on a low carb diet with 60gms of protein daily, which did not help much but it was a start. I am waiting for a consultation with Professor Kay I heard in an interview I was watching with Dr Chaffee, I contacted Dr Chaffee who was very helpful and when I mentioned Bart to him he said he is very knowledgeable as I am not sure about diet, especially being nearly vegetarian most of my adult life.

it saddens me a bit that so many people (carnivores?!) disliked the video. Grant's presents his material with an outstanding confidence, based on his long background and experience in the matter. It is known that vitamin A is probably the most important risk related to animal based diets, now even seemingly with some risk for plant based diets. We truly live in a modern world, and even as we try to bring ourselves back to the basics, we still behave like modern people, thinking we need to take supplements and eat things we don't even find good tasting, and do absurd things like counting calories in order to be "healthy". • @micafighter
      @micafighter 10 месяцев назад

I think it makes sense that our ancestors ate the organs as well, but probably the portions were much less. Today you can go buy pounds/kg-s of liver easily, couple of thousands years ago you would have to do a lot of hunting to get that amount of liver.
So I think organ is probably fine and good for you in small portions, but it is so nutrient dense it is easy to over consume.
This would also mean the "eat organ" advice is not necessarily bad but you also have to be careful of the portions.

Liver is a high histamine food which is probably why it is making some people itch, skin issues, etc. it is also a high sulfur food, which some people have difficulty breaking it down properly, so will cause various symptoms if this is the case. I absolutely DISAGREE that liver causes vitamin A toxicity. No science here and this man and his methods of deduction are absurd in my opinion. He didn't have a physically demanding labouring job like digging ditches, landscaper, concretor, brickkayer or even farmer outdoors all day in the sun. If he was not employing the use of his muscles, there would be downregulation for the need for Vitamin A. Being sedentary slows down kidney filtration and if you are consuming liver day in day out, you are asking for trouble. Gosh so many conflating variables. We need more evidence before going down this rabbit hole of Vitamin A being a toxin.

    • @mirellamatotek4294

How closely are humans related to polar bears? Polar bears are adapted to a high fat diet which is why they can tolerate high levels of vit A. This explains the variable experience in humans. It depends on your genetics and how well you tolerate fat in the diet. Those who originated close to the equator probably tolerate fat less as they are more adapted to fruit and vegetables so are efficient in converting beta carotene to retinol. Those further away exposed to freezing cold winters are more tolerant of fats, less efficient at converting carotenes to retinol. They are able to tolerate fatty foods and preformed Vit A. We also tend to spend most of our time indoors away from the sun and may not be getting sufficient Vitamin D. Remember, Vitamin A and D work in unison. If Vitamin A was toxic then you would also be reacting to meat and all animal foods. Perhaps you're best to go plant based with lots of veggies, fruits and wholegrains. That's right, they are also toxic to humans. Look at those who thrive on just fruit but I bet they are also living at the right latitude. Perhaps the solution is to move to where the latitude best suits your constitution.

09:05 *🧪 Grant Genereux questions the foundational study establishing vitamin A as a vitamin, arguing it was flawed.*
13:16 *🛑 Vitamin A toxicity can accumulate slowly over time, leading to various symptoms such as dry skin, dry eyes, and elevated LDL levels.*
16:04 *🔬 Testing for vitamin A toxicity is challenging, with serum level tests not accurately reflecting liver stores. Liver biopsy is the gold standard but is invasive.*
19:05 *🤒 Symptoms of vitamin A toxicity overlap with other conditions, making diagnosis difficult. Accutane side effects mirror vitamin A toxicity symptoms.*
20:43 *🧪 About 30% of cadavers tested for liver biopsy were found to be vitamin A toxic, suggesting a significant prevalence in the population.*
21:55 *🌱 Vitamin A originates in plants as carotenoids like beta-carotene, which can be converted into vitamin A in the body.*
22:21 *🥕 All vitamin A originates from plants, even in animal-derived sources, as animals consume plants.*
23:19 *🔄 Preformed vitamin A from animal sources has higher absorption rates than beta-carotene from plants.*
26:22 *🛑 Vitamin A has been added to various foods, such as milk, margarine, and seed oils, leading to increased consumption since the 1970s.*
27:46 *📈 Vitamin A consumption in the United States has increased by about 30% since the 1970s.*

31:40 *❌ Liver and kidney, being rich in vitamin A, should be avoided due to their potential toxicity.*
34:00 *🚩 Vitamin A toxicity symptoms include GI issues, cognitive problems, skin disorders, dry eyes, hair loss, and poor bone development.*
36:41 *🍛 The speaker's personal diet excludes vitamin A sources like liver and focuses on beef, bison, rice, beans, salt, and coffee to prove a scientific point.*
40:13 *🔄 After initial health improvements, some individuals may experience a slide back due to increased vitamin A serum levels during detoxification.*
43:57 *💊 Bile production and flow are crucial for expelling excess vitamin A from the body, emphasizing the importance of dietary fiber and fat intake.*
45:23 *🥩 The carnivore diet serves as a significant natural experiment, with two main camps: muscle meat-only carnivores and those consuming organ meats. Monitoring LDL cholesterol levels can indicate vitamin A storage in the liver.*
47:39 *🚨 Lack of distinction between muscle meat and organ meat consumption in the carnivore community may lead to health issues, particularly due to excessive vitamin A intake from organ meats.*
49:32 *🐄 Grass-fed butter from natural sources may contain lower levels of vitamin A compared to conventional sources, providing a potentially safer alternative for those seeking to include butter in their diet.*
50:29 *🍽️ While the concept of "nose to tail" eating is praised, modern dietary habits differ from traditional practices, necessitating careful consideration of organ meat consumption, especially liver and kidneys.*
51:52 *🩸 Long-term consumption of vitamin A-rich foods, particularly liver, may lead to vitamin A toxicity over time, resulting in various health issues, including autoimmune diseases.*
54:39 *📊 Conducting surveys within the carnivore community can provide valuable insights into the relationship between organ meat consumption and health outcomes, particularly regarding LDL cholesterol levels.*
57:27 *🛑 Individuals experiencing symptoms associated with vitamin A toxicity should consider reducing organ meat consumption and lowering their vitamin A intake to alleviate health issues.*
58:36 *🧬 Vitamin A toxicity symptoms closely mimic those of vitamin A deficiency, leading to confusion in diagnosis and treatment. Understanding the distinction is crucial for proper health management.*
01:03:42 *💡 The symptoms of vitamin A deficiency are often misinterpreted as a deficiency when, historically, they were observed due to vitamin A toxicity, highlighting the complexity of nutritional research.*
01:04:54 *🥩 Consider the potential for excess intake of vitamin A and other nutrients, especially on a carnivore diet where certain daily values may be exceeded.*
01:05:49 *🤔 Fat-soluble vitamins like A, D, E, and K can accumulate in the body, unlike water-soluble vitamins which are excreted quickly.*
01:06:04 *🌞 While vitamin D is produced naturally by the body and might not be a concern, caution is advised with vitamin E, and the relationship between vitamin K and vitamin A toxicity is uncertain.*

I don´t think the liver is bad itself, It depends on the person, I´m not from the US so my previous diet maybe wasn´t so high in vitamin A, I added dairy to my diet when I started the carnivore diet, so before that, it was moderate amounts of protein, grains and some fruits and veggies. How much liver was he eating or was he supplementing? What was his thyroid function? If metabolism is slow trying to rev it up will be problematic if other nutrients are inadequate. There is very little iodine and selenium in liver. Iodine needs to be replete before you can utilize all those nutrients available in liver including all those b-vitamins which are required by many enzymes. Optimal thyroid function is mandatory.
We only use up enzymes reserves when vitamins and minerals are deficient . The higher the vitamin the greater the affinity, thus the greater the efficiency of the enzyme. We don't know what SNPs he has. Has he investigated to find out? This may help to isolate the problem. For example, the build of phytanic acid found in animal foods and green leafy veggies can build up in individuals with the genetic disposition and cause vision problems such as cataracts, scaly skin, deafness, gait and balance problem. Using this as an example and because ruminate animals, eggs, dairy also sources of retinol how would you know which was to blame? Phytanic acid levels come down when foods are eliminated from tbe diet. Blood levels only tells what is being trafficked from one site to another or what was recently ingested but tells nothing about what is happening at the tissue level. It could be a transport issue, receptor, enzyme issue, we don't know and shouldn't be too hasty in labelling a nutrient a toxin without irrefutable evidence.
Do we know what his kidney function status was before he started eating liver or supplementing with Vitamin A? Supplementing is always fraught if kidney function is not optimal. Fat solubles will accumulate as they can't be easily excreted by under functioning kidneys.
Riddle me this, how does Paul Saladino cure his eczema eating liver but Grant develops eczema eating it?
Judy can we get a SNP analysis from Grant and Paul? It would be so fascinating to compare.
We have enough viewers here who benefit and those who don't to run a comparison study. It would clear up this issue once and for good. 😊

As a carnivore (5+ years now) I started by eating liver once every 2 weeks or something like that because I thought there was a chance that doing the carnivore diet wasn't giving me the all the 'vitamins and nutrients' that I required, and so I went with the 'safe route' and started it by having liver relatively frequently. But within 2-3 months, my body started rejecting the liver completely. I would put the liver in my mouth and my body wouldn't want to swallow it whatsoever. I was completely rejecting it. I would compare it to periods in my life when I had way too much sugar or cake or something, and you're not full per say, your body is just telling you something like "hey, enough of that already, I can't deal with that right now"
Since then, I've been carnivore-ish (having alcohol 1-2 a week, and some dessert here and there) with some periods of strict carnivore in between, and only have muscle meat. I don't know if many people have felt the same way I felt that time I had liver, but it was an intense feeling of "this food shouldn't be going into my body right now".
In general my health as a carnivore-ish has been great. My body composition is perfect. Sometimes I look myself in the mirror and think to myself "this is cheating; I haven't worked out in a year and look better than ever". My posture improved massively, joint pains slowly went away (I have/had a bad knee which I find is still improving after 5 years). Never had bad acne, but I notice that when I eat certain foods, seed oils in particular, I get some pimples on my face.
I never experienced any serious dumping or detox or w/e you want to call it in my journey, although I have gotten sick with 'flu'-like symptoms here and there, and I can safely correlate many sicknesses with an excess of poison foods (carbs, alcohols, fried stuff).
Also, I've had liver, I think a couple of times, since then (but this was years ago) and I didn't feel the extreme disgust then. It's all very fascinating
As as side note, for anyone that's interested in an almost unrelated topic:
I've been learning a lot about toxins and poisons lateley and I have come accross the idea that viruses don't exist, that bacteria, even though they do exist, don't make you sick, they just proliferate (they were already there before the disease even happened and are in us (yes most of them, even the tuberculosis one) all the time) in areas that are sick/diseased and appear to be taking care of the dead/dying tissue.
All this is to say that this vit a is poison idea goes in line with the idea that, among some other things (such as stress, lack of sunlight, etc.), poisons are the things that actually make us sick. There are these things we can call toxins or poisons that affect our tissues in a negative way, and that this idea that there are bugs out there that are out to get you is nonsense.
Anyone that is interested to learn more about this go to odysee and search for Dr Sam Bailey. She has great videos explaining all of this. Other people to look for would be Dr Tom Cowan, Dr Andrew Kaufman, Dr Mark Bailey, Mike Stone at viroliegy.com

according to Dr. Eric Berg on the liver , it has the Vit A that is not toxic, if you research what he is showing , he explains the whys and why nots about beef liver, calf liver does not have as much nutrients as the grown beef catlle liver,,, so you can;t go with people's assumptions and so on. I admit I was wondering , but checked it out for myself, matter of fact you cook the liver with orange jiuce it will do away with that nasty iron taste!! here is the video>>ruclips.net/video/1ZmXKYL240E/видео.html

14:22 regarding what a safe amount daily would be, the doctor says it used to be 5000 RDA and then it was lowered to 3000. I checked wikipedia, and the safe amount is now down to merely 900! One day it will be none! To quote: "For U.S. food and dietary supplement labeling purposes, the amount in a serving is expressed as a percent of Daily Value (%DV). For vitamin A labeling purposes 100% of the Daily Value was set at 5,000 IU, but it was revised to 900 μg RAE on 27 May 2016."

@Kristi Vice I would not be horrified. This entire video was him stating: a) synthetic Vitamin A is incredibly toxic to humans b) preformed Vitamin A (derived from animals) is added to foods our bodies are not designed to contextually register. Therefore he has not proven that vitamin A consumed through an animal product like liver is a problem. This guy is also an engineer and geologist. His own website states he has no medical experience. I agree with the other reply (Sonja) who recommends following Drs like Ken Berry instead.

I’m really glad you had Grant on. I read his first e-book long before eating a carnivore diet (started eating this way a little more than a year ago). Somewhere along the way I bought into the beef liver craze and abandoned my caution of consuming too much vitamin a. I ate a lot for weeks on end-probably a pound a weeks for two or three months. Then my hair started shedding excessively, my right hip began to throb, and my weight started to climb despite nothing else changing in my diet. The weight always goes back down and the hip pain stops within a few days of stopping liver (unfortunately, I’m still trying to recover from the large amount of hair loss). I say always because I’ll periodically try putting it back in my diet, and I get the same results. I did it as recently as a few weeks ago. I wasn’t even consuming more than the equivalent to an ounce a week. Only two weeks of a very small amount and those same symptoms returned. I’m even having issues with eggs at this point. I know a great many people value eating liver, but this information is incredibly important to be aware of especially if you aren’t feeling great.

What you describe Tex is exactly what happened to me - I ate massive amounts of beef liver when I first started carnivore, and started having excessive hair loss, dry itchy eyes, irritability etc, and when I stopped eating it for while because I didn't fancy it any more the symptoms went away. Just last week I had some lamb's liver and also some liver pate and the hair shedding started up again, and I also had red itchy eyes and an itchy exzema-like rash on my neck. I'm staying away from liver now, which is a shame because I love it. I'll stick to heart as my go-to organ meat now I think!

What this guy doesn’t tell you or more likely doesn’t understand is that Retinoic acid is needed on the receptor for activating Thyroid function, T3 and so it plays vital role in thyroid homeostasis.
The poison / medicine is in the dosage. Having liver once a week isn’t going to hurt you. Or having 2-3 liver capsules daily will actually give you enough active form vitamin A to hit RDA, and not go over. One liver capsule has about 830IU of vitamin A. Just google a vitamin A calculator and put it in.
What he also doesn’t tell you is that Vitamin A active form and Vitamin d3 work synergistically to reduce Th17 and autoimmunity.
And you wanna know what else can give you orange skin? Thyroid dysfunction.
And he said liver contains plant toxins? The liver is not a storage of toxins. I have no idea why people listen to this guy. He just speaks with conviction but it doesn’t mean he knows what he’s talking about. You’re doing your audience a disservice by giving this guy a platform.
