Depending on the quality of Olive oil, do not use olive oil for frying if it is not extra virgin olive oil because of its low smoking point which makes it unhealthy. Jundee is right, better use it only for salads. Coconut oil is one of the best for frying.

I think the dark soy u mixed in the pako is "sweet soy sauce". Its is mixed with palm sugar that is why it gives ur dish a very saavory flavor. With regarda to red rocket, i suggest u change the axle bearing n oil seal on both sides to avoid further repairs, if one side fails sooner or later the other side will fail also.
