Ion-dipole forces occur between ions and polar molecules. Why do all the videos start with the Na and Cl already separated? What separated them? That is an ionic bond, what forces made it to break and get replaced by such a weak force as the hidrogen bonds.

If you go to khan academy's website they will respond
polar molecules ARE dipole molecules. since polar molecules require a partially negative and a partially positive side to the molecules, they are a dipole since dipole means "di (two)" and pole which means, well, pole. so dipole is basically having 2 poles.
