Brewing Gesha with the Kono Meimon Dripper | Coffee with April

  • This week, we're experimenting with the Kono Meimon Dripper by test brewing some of our latest Red Honey Gesha release from Costa Rica.
    The Kono is a very popular model of a coffee dripper, more commonly found in Asia, Australia or New Zealand. We were encouraged to give this brewer a try by our friend and April Athlete David Train. The model that we chose to use for this video is the '2 cup' size of clear brewer.
    Join us as we explore what you can expect to find when brewing with a Kono Meimon, as well as suggesting a recipe we find works particularly well when pairing the Kono and April coffee together.
    You can replicate the recipe featured in this video by using the following guidelines:
    14g - 200g
    88°C Water
    50g Circle - 0:00 - 0:10
    50g Circle Pour - 0:30 - 0:40
    50g Circle Pour - 1:10 - 1:20
    50g Circle Pour - 1:50 - 2:00
    Total Brew Time - 3:20
    We used a Commandante grinder, on a medium grind setting for this brew. We suggest a grind range on Commandante set at 45 clicks.

    It's so fascinating how much of a different recipe you've created for this brewer.
    I don't have a Kono Meimon, but will definitely try this recipe with their yellow filter paper on an origami.

    I have REALLY been enjoying this brewer.
    I find that a long as I get the filter to stick properly to the sides of the brewer, I have good results with every different brewing method I've used.
    One thing I really enjoy about this brewer is that it will make EXCELLENT single pour brews with no stirring or swirling.
    I can grind on the very fine side of drip to help with extraction.
    Clogging isn't an issue.
    I'm getting very sweet and flavorful cups with light, medium and dark roasts.
    Quite pleasant texture and acidity as well.
    Seems very well balanced to me.
    And it's extremely repeatable as the variables are lessened with a single pour.

    I’m so glad you got a chance to use the Kōno and enjoyed it. The dripper has worked very well for me in competing and for home brews. I love your method and I am also experimenting a lot more with simpler more precise pours. And you touched on the dripper helps highlight some more body in the brew, which helps compliment your Volcan Azul Red Honey Geisha.

    My fave dripper! I usually do a 4 x 50g pour brew recipe for Kono as well, adjusting temperature and dose depending on the coffee. I've been finding a 50g - 50g - 100g type pouring is also very good at capturing some lighter notes in coffee brewing and can showcase acidity and balance in an interesting way. Glad to hear you're enjoying the dripper!

    Thank you for this video. It’s nice to see you exploring different type of drippers. But as someone just received this geisha, I also want to know how you will brew this coffee with regular equipments you used before like V60 or Origami dripper.

    I tried april coffee, and no matter the methode, the taste always comes great. Another story with undeveloped coffee or poorly roasted. I have to tweak my brain just to get that pleasent taste (drinkable) :D

    Thank you for the super interesting video as always. I have recently become more interested in a coarse grind style as I believe it will result in more even extraction, so better sweetness, more pronounced flavor notes, etc. Though, I do think coarse grinds sacrifice EY as a trade off. Anyways, one way to allow you to grind coarser, on the hardware side of things, is to use a thicker filter. Though this would allow you to grind coarser, a thicker filter usually sacrifices body. Now do you think it would be beneficial then to have a brewer that is smooth on the inside so that you restrict airflow and thus slow down the brew that way?

    I’d love to see you experiment with the fellow prismo. It’s not espresso, but you can get something similar to a modern lower pressured espresso.
    I had some great cups with your h1 filter coffee by grinding 21,5g fine espresso-ish, then pouring 75g of water in 10 sec. stirring 20 times, and start pressing at 45 sec for 15 seconds.

    Just one question: when you are using 50 clicks on the Comandante grinder is that 50 clicks with the standard parts or 50 clicks on the Redclix?

      I assume he is using redclix but cannot be sure

      @@fjoisuiolufjlw surely not red clix because that would make it in the low 20s with the standard axle which isn't particularly coarse. Must be 90 red clix, have fun counting that out! 😂

    Did you ever experiment with using a v60 with 2 filter papers, creating a recipe similar to this one? I think it might be very interesting.

    I‘m curious. What extraction percent do you tend to aim for... the low end- 18ish, middle- 20ish or higher- 22ish +???

      Late reply here, but if high extraction is the goal, I don't think methods with coarse grinds are the way to go. Check out Lance Hendrick's Kono video if you're trying to push extraction.

      @@adamthemute no, high extraction is not my goal, actually knowing the specific tds and extraction percentages that Patrick is aiming for is. I guess I should have been more specific with my question although they seem uninterested in answering at all so whatever.

      There is only one ext % that will get you a specific tds with a specific amount of water in.
      1.25tds and 12/200 will out you at an 18% EY. (There is some nuance to this, but this is a general guide)
