Thanks for sharing Brian! I’ve been enjoying the April recipe with a slightly slower pour, and then waiting until around 1:00 for the second pour. The longer rest seems to get a stronger cup and is really nice with soft water.
Big fan of Patrik’s method, mine usually brew about 1:30-2m and noticed yours was 1:30 too but the result is never under extracted which is good. Will give yours a go.
I've been using your recipe (50 - 50 - 30:70) for some time now (@12g) but for more heavily processed coffees I revert back to the currently recommended April recipe (50:50 - 50:50) and 13g dose. One big change for me was to start using Cafec V60 filters in the April. It's basically 2 folds, takes no time (I can easily do this and hand grind my coffee before the water gets to my desired temperature) and it gives you a much quicker flow. April with V60 papers is my daily driver, sometimes I will reach for the Hario Switch just to keep things interesting but I always start my day with April.
Yes current PR recipe 50 circle 50 center in both pours, and also one with a longer wait between pours, maybe even one with a rest with a bloom. I think one should always adjust to coffee and preference. The main thing with April brew is the balance due to most of extraction happening early and using that center pour to get bypass. That is what gives the balance in my opinion. Bravo Brian!

Thanks for the thoughtful video Brian, I have the blue April filter and use the Kalita papers which I also find can clog so mitigate with courser grind size, my current brew is 18g 80x80x80g pour for a long white coffee. Used Costa Rica Solis Cordero Medina beans this morning dark roasted, very nice too! 👍
Great video, excited to try your recipe with Sey. Love the original recipe for Diego Manhattan too, 92c is perfect! I feel like I have to adjust temperature a lot on the April, especially with various elevations on Sey, worth a discussion.

Damm that's the recipe I've been using as well for the exact same reason! I'm using the kalita papers that come in the cardboard packaging, they're much better than the ones in the transparent plastic packaging. With very fresh coffees, I sometimes let it bloom for 1 min to get a faster drawdown.
When you use the Rolfcipe, what water temp are you using typically? I've had the same experience as you though where i find the heavily processed coffees really shine with the Rolfcipe. I've tried your version too and have enjoyed it. I'll have to try it specifically on some washed coffees though, I haven't done that yet.
Great video Brian. Have you tried the Timemore B75 at all? I was a big April fan but gave the b75 a go using essentially the same recipe as you, with some swirls. And the b75 gives a big boost to acidity and a bolder representation of most coffees to me. I really like the small size too just like the April
Tried this with a natural anaerobic from Yemen. Finished at 02:10 with medium grind-fine, 94c. Not a good brew, muted flavor with some bitterness. What should be tweaked?
@@dan138zig no, i meant it as a suggestion. try grinding coarser. i had great tasting brews with grinding an ethiopoian at 4.2-5.0 on my fellow ode v2, drawdown at 2.10-2.30
I just picked up an April brewer and saw this recipe right after I ordered. I am going to try this recipe and a couple James Perry recipes. BTW I found S&W Roasting from the first video of yours that I watched. I was so surprised! 30 minutes from where I live
@@dan138zig I like the James Perry's recipe. I start with the two pour which is the April recipe. Then decide if I want to add another pour. Definitely not an expert on the brewer though.
Hey, are you sure you can trust that TDS difference? It's a 0.03% difference between the two recipes and I kinda have strong suspicions about whether that's significant enough considering the precision of the device and the possibility of human error.
I don't really care much for tds differences with this recipe but rather how it tastes so you can try it out yourself! If you want to have a drastically different tds on this brewer just grind finer and do a 60s bloom
@@BrianQuan Yeah, I agree! Taste is what matters. It's just that I think TDS measurements can be unreliable sometimes and they are prone to intrinsic error as any other physical measurement. But I think they sometimes can come across as absolute truths and a topic of excessive focus. It's not to take away anything from the video, which I enjoyed!

Grind into a portafilter dosing cup, seal it, shake it only vertically, open, put your filter upside down on it and flip both together. Your fines will be on top of your grind in the paper filter and hardly clog it
Patrik said that the speed at which is he pours is optimized for competition setting, where time matters. I'm not sure why everyone treds so lightly when modifying his recipe for home use or individual tastes.
Hi, I didn’t have clogging problems with the April filter but currently do with the Kalita papers, try to prevent this the same as Brian and grind coarser. I personally prefer medium to dark roasted coffees so don’t want to over extract, anyway good luck. 👍
@@HeisFaithful7 Probably grinding too fine. Your going to grind a lot coarser than you think (close to french press coarseness) + follow April's pouring structure or something very similiar. I believe April dripper goal is to extract coarse grinds more evenly which is why it considered more tea-like. This brewer is not very flexible with other recipes which is a good and a bad thing. I noticed multiple small pours/ higher agitation leads to more clogs.

Pragmatic and realistic outlook IMHO. No fun in trying to brew a certain way just to rush it and not enjoy the process.

April aims for 1.25tds. mine Clogs every time with light roast and the April filters. Hate this brewer
