- Most days, I pull the Kono Dripper out for my cup of coffee. It's easy, forgiving, and consistent. Try these recipes out! If you don't have a Kono, try really blasting water into a small V60 to get the paper as suctioned to the walls (inside the crevices) as possible! With enough force, you can almost replicate this!

For the below recipes:
12g coffee to 200g water
Medium-Fine Grind benchmark-- lighter coffees, go finer. darker coffees, go coarser.
Water Temperature should be decided based on roast development and density. Lighter and/or more dense coffees, higher temp. Darker and/or less dense, go cooler.

Hey! Steaming for that is the same as steaming for anything else! And pouring, as well. Just need to work on control of flow rate
Thanks for the content. I think it would have been helpful to have a zoom in on the grind size with a mm ruler for reference.
I choose not to do that because I find that unhelpful. What might look like majority grind size on my grinder will likely not help the majority of viewers as their grinders will undoubtedly have a different particle distribution.

After a couple of years using V60, I got my hands on a Kono, and I made a funny discovery. I expected, that because of the lower bypass and longer brewtime, I have to grind significantly courser in order not to overextract. But in my experience, I can grind even finer than with V60 and have a suprisingly nice cup of coffee. My theory is that in case of the V60, if you use too fine grounds, you increases the amount of bypass because of the higher resistence of the coffee bed, which causes the grounds on the edges to overextract, and the middle to underextract. With the Kono, it extracts the coffee more evenly, because the water cannot bypass the coffee bed, so even if you overextract a little bit, it will taste good.

I got mine a while back after watching your video.
I'm finding amazing brews with a single pour method.
I just ground some Light medium roasted Costa Rican Tarrazu red honey processed coffee at a setting just courser than espresso with a 1Zpresso Q2. Using a cafec Abaca brown filter paper. Using water just off boil. Made a single pour at a fairly fast pour rate (similar to the pour on Hario's Mügen V60 video). Total brew time was just about 1 minute. (Kudos to 1Zpresso)
Tastewise, It does seem on the very high side of extraction. Highly floral, good sweetness. Keeping with the same variables except grind size... Slightly more course grind introduces even more sweetness and acidity. And more course than that, more acidity, no/low florals, as you might expect.
I got a very high extraction tasty brew!
I've had such great results with this dripper just about every different way I've brewed with it. It works great with light through dark roasts. Single, double, triple pours.
The only way I've brewed a bad cup with the Kōno is the 1st few times I couldn't seem to get the paper filter to stick to the sides of the dripper. Now pressing the filter deeper in and using the sink tap to wet it... no problems. Thanks for that high flow paper wetting tip!

Just tried the first recipe, and man, maybe the sweetest cup I’ve ever brewed. I’ve been trying to tame the acidity of a new natural processed Ethiopian that I’m trying and this definitely did the trick
It's so amazing how changing just a few variables can make such a huge difference in flavor. There's no end to the exploration of coffee brewing (and roasting).
This is nice. I still do v60 sometimes when I'm not busy just to experiment but mainly using a clever dripper now to avoid the trouble of all the variables from pour-overs.

Tried the first recipe with Roguewaves Colombia decaf this evening! Delicious! Juicy with an awesome texture and oh so sweet. Only change was I tightened the ratio to 1:16 and used a 22 on a Comandante MK4. Great work.
I just got the Kono, because of this video. And must say, it is an amazing brewer and recipe from you! I tried it with 2 ethiopian light roasts, had a longer draw down with the hario untabbed of around 8 to 9 minutes (ground on the 1zpresso q2 heptagonal at a 15) so still need to adjust the parameters a bit. Nonetheless it was really delicious and just a tad of bitter notes which will probably disappear on further dialing in.

First RUclips post ever but had to. Loving the content Lance. I picked up a Kono after watching this video and it is making some of the best, juiciest, sweetest cups I’ve made. I’m enjoying a washed Kenyan right now and it’s crazy. I’m finding I’m able to grind much finer with my Weber EG1 with low fines burrs without channeling/stalling. Looking forward to an upcoming review of the EG1.

I don’t have a Kono so I tried this with a V60 and as another commenter already mentioned it gave me an extremely juicy cup. I dosed up a little bit more (15/250) and followed the recipe from there. It was delicious. I used the Ethiopia Beriti from Onyx which I’ve been enjoying a ton, but this provided such a different texture in the cup. Absolutely worth a try if anyone else out there wants to give this a go but doesn’t have a Kono. Thanks, Lance!

Thanks for the recipes. I’m an espresso lover and just starting to get into pour overs. I have an Organic Peruvian coffee that I just don’t love as espresso. I tried your pour over recipe to enhance sweetness and extraction. It was good, but when I tried your 2nd recipe to enhance acidity, this coffee really popped - super delicious! I enjoy learning strategies to tweak the cup to enhance different elements.
Also, I’d love to hear your thoughts on how long to rest a coffee after roasting. I’ve been roasting (usually Full City to Full City+), but I start drinking them after a day or two. I notice I got a LOT of bloom when making this as a pour over. The coffee was roasted about 4 days ago. Should I be resting longer?
Crazy to think it has been around so long. I think i read it was made in the 70's. Looking forward to a no bypass brewer video.
It was made in the 20s from what I've read! Predates most Brewers! Crazy. They nailed it long ago haha
Hey Lance, I've had my large Kono for a few weeks and I'm getting very tasty results but I often get clogging (6+ min brews) which I think is from the extra agitation of the high pour for turbulent flow. I'm using 23g to 390 water. I do use 3 pours after the 2 bloom pours. Would you suggest changing the pour style to be less turbulent or maybe I should cut back to 2 pours? Another option would be grinding coarser but that doesn't eliminate fines. Thoughts?
I would be less aggressive on swirling! That's more than likely what is causing the clogging, not turbulence. But, you could also try pouring with more laminar flows near the end!

I've got a couple of questions regarding this recipe and how it's possible to get even better results with your V60 recipe applying some advices you gave in this video.
1st the blooming water temp should be at boiling point or not? Even with darker roasts?
2nd would it be better using a 2 min blooming and keeping the rest of the recipe the same?
3rd laminar vs turbulent flow, which one to choose when using that V60 recipe? It looks like you used a laminar flow there.
4th would you keep the little swirls just behind the center when using a gooseneck kettle in the V60 recipe?
5th any chance on making an improved V60 recipe video considering these coffee geek information you stated on the Kono video?

Just tested the recipe with the v60-02 (I don't have a Kono) and scaled up to 20g-340g. Well, that was (by a lot) the sweetest and juiciest extraction I had from this coffee I'm drinking so far. Pretty impressive. The 2 minutes bloom seems like the main difference here. Looking forward to test it with others coffee. Thanks, Lance.
Awesome! And yes. The 2 min bloom will improve any pourover extraction. Try it out!

Hi Lance, any reason why you use size 2 and cut it? I bought the kono dripper and was able to find cafec medium in size 1 that perfectly fit to it.
Would the same ratios of bloom/pours transfer into 300-400ml brews (for example your first recipe of 15% + 15% bloom, 35% + 35% pours)? Or, at what point would you typically add one more pour? Thanks!
Yes! It would! I wouldn't add another pour unless you wanted to increase agitation and contact time
Hi Lance this one is cool. A 2min bloom that is long. Curious to test this. I have a regular kettle. I cannot hold temp that long. So I would have to reheat it on full power again after the first bloom. But you drop temp a bit on the third pour right? I may let it go by then or else I would do a double boil and have constant high temperature. Or is there an other thing use people with a standard (non temp control) goose neck can do?
There is an important study coming up to prove this saturation point for LRR. And I would reheat to fill for second bloom then let temp go down naturally for rest

Hey, would you use your method with decent entry-level grinders like an Encore or Timemore C2? Or would the not super-consistent grind they do (compared to the next levels of grinders) not work well?
It'll work! Might want to be a little gentler with agitation using the encore but the timemore should be fine

I have not used a virtuoso in a couple of years. It used to be my home grinder. I am not sure what I would recommend but I'm thinking it would be somewhere in the 15 to 20 range?

there are three kinds! the ridges are shorter on some. which one are you using and recommend? Kono - MDK-21 (shortest ridges), Kono - MD-21, Kono - Meimon MDN-21

Would you say the Kono is also suitable for the single pour technique? It looks like the Hario Mugen (also with hardly any ribs) which is said to be the best dripper for single pours.
Lance, with the times between pours being so long, do you set the EKG kettle to re-heat the water between pours?

Are you using the sette 30 or used to? I’m looking at getting a grinder and I’m in between the 30 and 270. Would like to save the money on the 30 if it’s good for espresso. Thanks!
Yeah! The 270 is incredible. I'd recommend that, for sure!
Hey Lance, is the Kono still your daily driver? I’m looking to get into V60 style of pour over, you still prefer the Kono?

I have a V60-03 size so I can make enough coffee for my wife and I. I usually use around 40g-50g of coffee in my brews depending on how much coffee we want for that day. I really don’t see any recipes for the V60-03 size. Do you have an recommendations for this size? Thank you!
Bought one because of this video (Sadly, only the pink one was available. My girlfriend loves it though) and the I didn't expect the difference to my V60 to be this huge.
Pretty much same recipe (4:6) 20g/300ml and just now I brewed 12g/200ml. Slightly weaker but clearer, I think? I'm not good at coffee speak 😄
Gonna go a bit finer (currently 3.0 on a M47 Classic) and and experiment more but I'm flabbergasted how much the dripper does for taste. Might buy a aeropress as well now and explore more.
Your coffee speak was perfect! Yes. A wider ratio would lower the strength (tds) but increase clarity.

Your trick for wetting the paper with a big pour of water helps with the V60 too. With a normal slow pour from the kettle to wet it, sometimes it doesn't stick evenly down in the bottom half where most of the brewing goes on, which I think probably hurts extraction and consistency.
Another very informative and detailed explanation. Thanks, Lance! I have my Konos (the one where you can boil it all day and still be crackless) and tried brewing with the first method. I had a TBT of 5mins. It was really tasty but it also have bitter dominating flavors. I try to grind as much as I can because as you said before and as I've read with Gagne's blog posts that we are wasting coffee if we grind coarse.
If I get a bitter cup, what are the parameters I need to tweak? Should I try to grind a little coarser?
Try swirling less aggressively is the number one piece of advice.
Second is to use a lower dose. That specific version has really low ribs, which means the more coffee, the more it stalls.
Last, I'd consider lower water temp

Will, in this case I mean literally less coffee in the brewer so the depth of the bed is less. Can be same ratio if you'd like

Yeah. I do 10g on the clear one with high heat ability. The ribs are so so low that 12g sits well above them, causing some flow issues
Lovin' the vids and info. And love the idea of brewing smaller cups and having different coffees - or just not letting things get cold... I usually have at least 1/2 my cup too cold before I get to it. BUT I usually make coffee for my wife as well. If I were to brew a "full" batch with the Kono so I can split the cup with my wife, would you just double all coffee/water amounts and keep the timing and grind the sale, or should I adjust otherwise? [Grinding on K-plus with light-to-med roasts, usually ~1-2wks off roast]
You can try doubling. For sure. But I'd probably, after the double bloom, take the rest of the brew water and divide by three pours instead of two.

Yes! Absolutely can. Just know once below 10g, there will be bypass.
Lance… can you do a grinder setting overview? Breville smartgriinder Pro is amazing but dialing in for aeropress/v60/espresso is challenging. Love to know what you use for that grinder, plus all your others. Always would be good to see what you have as a starting point on that grinder for v60.

Thanks for all this amazing content! Question: If ribs are leading to a lot of bypass, why are they there at the first place? Would it not be better to have no ribs at all?
I'd there was complete suction, the drain time would be forever haha! The room for escape would be tiny real estate. That, plus the purpose of a conical device, imo, is that stratified extraction. You can enhance different parts of the coffee. For a no bypass solution, I'd recommend the tricolate. I'll do a video soon!
If you want to mess around with a brewer with practically less ribs (technically there are some but I doubt they do anything) there's always the hario mugen
Awesome video!! As I’ve gotten deeper into my pour over journey, ive seen how the Kono seems to be such a consistent dripper. What, if any, tweaks would you consider when brewing naturally processed coffee vs washed?
Also, any suggestions for a starting grind size for lightly roasted coffees?
Natural will extract more readily, so maybe lesser temp or coarser grind.

I always prefer lighter roasts, bug it can be adapted to any roast level with grind size and water temp
I see you would only go up to 15g of coffee for the smaller kono. I really like 18g coffee and 300ml water. I emailed Rogue Wave to see if 18g coffee would go above the ribs for the larger kono. They said 18 grams sits even with the top of the ribs, so it does not go above them. So which size should I get?
If doing 18, I would recommend the larger one, for sure
Hi Lance, love the video. Two questions. The first one: Do we just scale down the amount of water as we scale down the weight of grounds?.
The second one: Should we use the same grind size as in your V60 method?
First is correct. Second is finer than that. Unless using darker roasts

@@LanceHedrick it's the Tegu from Squaremile. I think it's already out of stock cuz they have another new Kenya out. I liked their last Kenya more though. I found that one gave me more sweetness than the Tegu.
Oh gotcha! Yeah they tend to flirt with going a bit too developed for me. Coffee collectif and Tim Wendelboe have some really nice ones right now!

Hey Lance! Great video as always. Do you find that the Stagg EKG kettle works best for turbulent flow? Your other brewista allows for faster flow rate and I assume higher pouring height before the water breaks. Any thoughts? Thanks! 👌 Just got a kono 2 days before this video haha. PERFECT TIMING!
I do like the Stagg 's flow. I find for my pour style, and the flow rate I like to employ, it's ergonomics match well. Trying to hit certain speeds and angles asking with turbulence. It serves me better than the brewista as I've been learning into non laminar
@@LanceHedrick good to know, I was going for a brewista but I preferred the smaller base of the Stagg.
For sure! And the knob is far and away better than the touch buttons on the brewista. So annoying.
With this double-bloom technique in Kono, do you still get lower EY compared to normal stagg x brew?
Depends on what you mean by normal! The way I brew the Stagg x, I get higher ey with it consistently. Hard to compete with a flat bottom brewer when you suction a trapezoid filter in like I do with a double walled high thermal retention brewer

Yes! No need to cut. I do it because I hate how ugly it looks lol

Yeah! It stalls flow a bit more than this but it is quite similar! Might need coarser grounds to emulate times

@Lance Hedrick in Gagne's blog post he says "You can achieve this by pouring just a bit lower than the point where you can hear a splattering sound as the stream enters the slurry."
This is not what you said in a previous comment discussion here and the video.
Was there any difference between Gagne's book and his blog post concerning the pour height "at the splattering sound" or "just above the splattering sound". Do I have to hear the splattering sound or not?

Yoooo Lance!!! Our Kono just arrived, and we are stoked! Question (I've asked a similar one on your V60 video): what's the largest dose that you would brew on the Kono. My wife and I like to share a cup, and while I'm never against doing two brews, sometimes there isn't the time. I'm thinking of doubling your dose for starters, but would appreciate your opinion. Thanks man!
If you have the larger 4 cup Kono you can double dose. Otherwise, I think Lance said he'd max out at 15g for the small Kono

@@LanceHedrick loved it! Used it with a Thailand light/medium roast. Very balanced and sweet, taking back the acidity a bit. But the killer tip was the quick pour to make the filter stick to the sides easy.

Recipe two will help accentuate acidity! Lessening by one pour negates some agitation and helps pop up the acidity. The big second pour allows sweetness to not get lost in the lesser extraction. (This is my speculation based on my observations)

As high up away from the dripper, you hold the kettle is it really necessary to cut the filter?
Also, Kinto makes a filter in the size you cut that one to 😊
Could you make a video on the stagg X or XF. Or elaborate on what you do with them. I’ve got the XF and really like it. I do large pours usually. 35g coffee then 80g bloom. Then 120g first pour. Then 200g pours to 600 total.

About to order a Kono but I'm curious, is your "goto" the coloured Meimon ones or the clear MDK-21? It states the MDK-21 has shorter ridges and drips slower. Thanks!
I just managed to order the 4 cup version and I didn't even realize there was a difference between Konos, but it looks like you're right. Shorter ridges would be less bypass so I hope I didn't make a bad choice since I think mine is the meimon.
@@jamesbrightman3997 I prefer larger brews than the ~200ml in the video, so maybe the higher ridges might be okay if the grounds cover it, Small difference either way I'm sure!

Thoughts on the kono meimon vs konos when brewing the same recipe and same dose of 12g?
So, the konos will drain slightly slower. I'd probably go just slightly coarser
