    I made this dish last week just to test it. Here’s my warning to you...
    Don’t make this unless you want to ruin every other scalloped potato dish for the rest of your life! This dish is not good...it’s freaking AMAZING!

    For family dinner tonight, we had pulled pork and made these potatoes. We followed the recipe exactly. When they came off of our YS480, the potatoes had just a little bit of tooth to them, but they were pretty much the perfect consistency after resting for 15 minutes. This is a phenomenal dish. Holy cow. Everyone raved about them. I went back for seconds on the potatoes and not the pork. We will definitely be making these again. But they aren't exactly a health food, so they'll be a special treat.

    I made this last night on my offset smoker. Instead of russet potatoes I used gold potatoes just because I like those better and they don't have as much water in them. This dish has become my favorite potatoe dish. It came out amazing the first time.

    This is the perfect leftover dish to cure a holiday hangover (or any hangover). I want this with a “next day” Thanksgiving Turkey sandwich and stuffing while watching football. Great stuff. Thanks.

    Just made this last night. I didn't have the tri tip rub but I had Trail Dust so used that. Oh my god is this good. The feta does add a nice twist to the flavor. Best scalloped potato recipe I have ever made.

    That sauce is something we make regularly here at home. But we also add mushroom, then finish with ground black pepper. Very good sauce for steak, also very good as a dipping sauce for white bread.

    Use a corn on the cob holder to stick in your potatoes when you're peeling them. Makes a nice handle, I haven't dropped one in the waste basket since

    If you do potatoes last and don’t soak them in water, it will set better, you’re washing the starch off which allows it to stick together. Won’t be as soupy

    This was good Bro. Used white cheddar AND smoked gouda cause I can't cold smoke. Gouda didn't melt very well BUT it was still an awesome dish!!! BTW, anyone who buys a grill or grilling supplies where I work I always tell them to check out chef Tom!!!

    I tried making this over the weekend. The taste was great and I did probably go a bit heavy with the Bacon. My issue is that it was extremely greasy and loose. Not sure what I did wrong but I guess it could have been the extra grease from the extra bacon? Thoughts.......

    That looks great. Just a thought/question. Since the cheese is getting cold smoked, Do you think that if you shredded the cheese first and spread it out on a pan and then smoked it. Maybe it would get more smoke on the cheese? I don't know if the cheese needed more smoke or not but that seems like that might be an easy shortcut.

    Hey Chef Tom, thanks for sharing this! Looks awesome! Question. Have you guys ever thought about doing a recipe based around some of the popular diets that are out there (Keto, Whole30, Paleo). I'm smoking meat all the time, but decided to start the Whole30 diet recently and I've been thinking a lot about smoked meat and how to make that work with this diet. Thanks!

    I love scalloped potatoes. in Germany, we just call them "potato gratin" or "Kartoffelgratin". I miss eating proper potato gratin for years.

      You can cold smoke on the newer YS640s. Yep, you will smoke it the same way as in the video.

    This is like a BBQ version of tartiflette. It has pretty much the same components, except the funky soft cheese.

    Hi, Chef Tom. What would happen if you grated the cheese prior to smoking? I was wondering if that would infuse the smoke more evenly, or if you think it would run the risk of affecting the texture of the cheese. Thanks in advance.

    I know I'm probably alone on this one but I'm not a fan of onions. I don't mind the flavor and I honestly don't mind them fried, but cooked any other way, I just can't stand the texture. Any suggestions on a substitute for the onions? Onion powder? Help. I want to make this dish.

    Could you not grate the cheese first, spread it out on a cookie sheet and then cold smoke it? Way more surface area for smoke to get on other then just the small 4 sides of that brick of cheese.

      Two things he mentions specifically in this video: keep the air/smoke moving and only do it for 20 minutes. This is consistent with my experience with smoking cheese.
