I made this dish last week just to test it. Here’s my warning to you...
Don’t make this unless you want to ruin every other scalloped potato dish for the rest of your life! This dish is not good...it’s freaking AMAZING!
I feel this about most of the recipes on this channel.
For family dinner tonight, we had pulled pork and made these potatoes. We followed the recipe exactly. When they came off of our YS480, the potatoes had just a little bit of tooth to them, but they were pretty much the perfect consistency after resting for 15 minutes. This is a phenomenal dish. Holy cow. Everyone raved about them. I went back for seconds on the potatoes and not the pork. We will definitely be making these again. But they aren't exactly a health food, so they'll be a special treat.
I tried this and it was AWESOME... Thank you for showing this to us all.
Glad you gave it a try David. Thanks for watching!
Of all the great things you made on this channel, this looks the best. Also good luck to your Chiefs. They are having a great year.
Every delicious video of yours I watch I save to make later. Everything you make looks so good! Great tips and detailed explanations too!
I don't know what I did before I found this channel - thank you for all the amazing videos!!
I watched about 7 other videos I am sold on yours bro, don’t have a smoker yet so oven will do
That's got to be the most fire potatoes dish that I've ever seen!!🥓🔥
This was amazing, my kids couldn't get enough.
You're the man, Chef Tom. As soon as I can afford a YS640, I'm getting one. Hopefully next summer. Cheers from Chicago.
I have make this only alterations to add garlic . Perfect sir!
Those holiday scalloped potatoes look amazing.
Ima give it a try on Christmas
I’m making this dish along with a reverse seared London Broil for Easter. Thank you for all of the great content. I have learned a lot!
Thanks for watching and taking the time to comment!
Thank you Chef Tom
Hello Addison, glad you enjoyed this one!
Oh wow. This is going to pair up amazingly with the smoked turkey! Added to the menu!
Taking something ordinary and making it extraordinary! well done and thank you!!!
I made this last night on my offset smoker. Instead of russet potatoes I used gold potatoes just because I like those better and they don't have as much water in them. This dish has become my favorite potatoe dish. It came out amazing the first time.
Just when I thought I couldn't like these videos more, my man Chef Tom sports a Chiefs hat.
I fucking know right
Ravens!
I would love to see your take on bacon honey/maple Brussel sprouts in a cast iron skillet!
Brussels sprouts are one of my favorites. Chef Tom, rock it!
This is the perfect leftover dish to cure a holiday hangover (or any hangover). I want this with a “next day” Thanksgiving Turkey sandwich and stuffing while watching football. Great stuff. Thanks.
Another masterpiece Tom. Thank you for sharing.
Great recipe as usual. It's quite close to two french recipes "Gratin Dauphinois" and "Tartiflette". Great work !
Great BAtatoes THANKS!
Just one word... AWESOME! Greetz from Lower Saxony/Germany.
That is just too good
Unreal! I made this once and it has ruined me for life! We are on lockdown with COVID-19 and I plan on making this tomorrow just for me
That's awesome, thanks for the great comment.
One of my favorite holiday dishes brother, looks absolutely delicious
That Yoda Smoker Ys640 is his best friend for life. I want that pellet smoker so bad.
If you ever get one it will be your best friend for life too. There is nothing else even close.
Man those look out of this world, I will be giving them a go
Looks great!
Indeed! Thanks for watching.
I'm making this for thanksgiving. Thanks
Channel needs more views
Just made this last night. I didn't have the tri tip rub but I had Trail Dust so used that. Oh my god is this good. The feta does add a nice twist to the flavor. Best scalloped potato recipe I have ever made.
That is great to hear. Thanks for sharing and being part of our community!
Love this recipe making it again today. Being a lifelong Bengals fan living in St Louis; The only problem with the video is the Chiefs hat! Who Dey!
Oh I know what I’m going to make next weekend! Thanks Chef Tom.
Looks delicious. That's a meal on its own. Like the Chiefs hat.
Always a joy watching your videos 👍
What a funky and nice site recipe - I will copy this 👍👍👍
Im gonna incorporate some of these ingredients into my potatoes au gratin! Thumbs up man
That sauce is something we make regularly here at home. But we also add mushroom, then finish with ground black pepper. Very good sauce for steak, also very good as a dipping sauce for white bread.
your cooking recipes are amazing. Great Job
Use a corn on the cob holder to stick in your potatoes when you're peeling them. Makes a nice handle, I haven't dropped one in the waste basket since
Best scalloped potate recipe ive ever seen
One of my favorite sides! Looks delicious as always!
Great version!
You da’man Chef Tom!!!!
Awesome videos. Just got a pellet pro 1190. Trying new things. Gonna try this one soon. Keep up with the videos
Yup. Making this one.
If you do potatoes last and don’t soak them in water, it will set better, you’re washing the starch off which allows it to stick together. Won’t be as soupy
Wow that looks good. Love scalloped potatoes. Keep smoking!
Best looking scalloped potatoes I've ever seen. I think I'm going to pull a fast on on the FAM for Thanksgiving and make this instead of the normal mashed potatoes.
😂😂😂 the way he says LARDONS!!! I love it. So American!
Great recipe chef A keeper
Nice KC hat !
Watching this in 2023, a couple months after the chiefs have won yet another Super Bowl. Chef Tom… I like your style brother.
"After the C-H-I-E-F-S have won yet another Super Bowl" ... Now that has a great ring to it! Thanks for watching!
Try crumbled Mexican "Cotija" cheese in replacement of the Feta.....as an alternative.
This was good Bro. Used white cheddar AND smoked gouda cause I can't cold smoke. Gouda didn't melt very well BUT it was still an awesome dish!!! BTW, anyone who buys a grill or grilling supplies where I work I always tell them to check out chef Tom!!!
Nice!! Yummy!!
I tried making this over the weekend. The taste was great and I did probably go a bit heavy with the Bacon. My issue is that it was extremely greasy and loose. Not sure what I did wrong but I guess it could have been the extra grease from the extra bacon? Thoughts.......
This looks bomb, how many would you say, as a side, it would feed? I have a big family lol
That looks great. Just a thought/question. Since the cheese is getting cold smoked, Do you think that if you shredded the cheese first and spread it out on a pan and then smoked it. Maybe it would get more smoke on the cheese? I don't know if the cheese needed more smoke or not but that seems like that might be an easy shortcut.
Anyways great cook and thanks for the video!!
Chef Tom g’day from Australia love your videos, was wonder if you could do a video beef jerky video cheers
CARNITAS!!!!!
Tom you should do a video using a Pit Barrel Cooker!
Hi Tom, thank you for your great videos! I can learn a lot... What about a hanging Tender recipe? Do you have any special idea for that awesome pice of meat?
Perhaps cube that initial cheese into thirds ? more smoke flavor (surface area) ?
Can you imagine how delicious is the Thanksgiving dinner in chef Tom House?
Hey Chef Tom, thanks for sharing this! Looks awesome! Question. Have you guys ever thought about doing a recipe based around some of the popular diets that are out there (Keto, Whole30, Paleo). I'm smoking meat all the time, but decided to start the Whole30 diet recently and I've been thinking a lot about smoked meat and how to make that work with this diet. Thanks!
Meat salt pepper = keto I can make the video for you if you want
I love scalloped potatoes. in Germany, we just call them "potato gratin" or "Kartoffelgratin". I miss eating proper potato gratin for years.
Wow, another amazing dish! I'm curious if you think sodium citrate would be a good additive, and just mix the cheeses into your cream sauce?
Very nice video and recipe I'm wondering if you can cold smoke with a newer ys640s if so is it the same way you done it in this video ? Also what is a good smoke tube ??
We recommend this smoke tube: www.atbbq.com/accessories/grill-accessories/smoke-boxes/a-maze-n-tube-smoker-smoke-generator.html
You can cold smoke on the newer YS640s. Yep, you will smoke it the same way as in the video.

I am gonna try it with the feta so I know for myself...I wouldn’t think of that! It looks damn good though!!
I'm soooo doing this in a few days for Thanksgiving. Between this and the smoked turkey, I should be in about a 2 day coma.
This is like a BBQ version of tartiflette. It has pretty much the same components, except the funky soft cheese.
Hi, Chef Tom. What would happen if you grated the cheese prior to smoking? I was wondering if that would infuse the smoke more evenly, or if you think it would run the risk of affecting the texture of the cheese. Thanks in advance.
Dont grate it. It wont work...
All your videos are good. Just wished you'd make your own seasonings.
Looks great, but the link seems to be broken to the recipe.
could you grate the cheese first to give it greater surface area?
How would you smoke the cheese if you had the five days?
What is the name of the cooktop you were using?
Smoked turkey wings?
Skillet cornbread?
Chef, can I prep this the day before?
*BACON PUFFS*
make a patecheux with bacon fat
Make a butter cream but instead of butter, bacon & cheese.
Try it
Dankk
Can you do smoked Turkey Legs
You should make some smoked beef sausage
Oh.
My.
God!
Taters, onions, cheese and BACON! Smoked! I would get all over that!
Cream corn casserole
Woooooo! That's hot!
So bomb #atbbq owns...
If it was made and had to travel 1&1/2 hours some where. Just reheat it in a normal oven would be ok?
I know I'm probably alone on this one but I'm not a fan of onions. I don't mind the flavor and I honestly don't mind them fried, but cooked any other way, I just can't stand the texture. Any suggestions on a substitute for the onions? Onion powder? Help. I want to make this dish.
What in the world!
Make some holiday frog legs.
love all the videos GO CHIEFS
Could you not grate the cheese first, spread it out on a cookie sheet and then cold smoke it? Way more surface area for smoke to get on other then just the small 4 sides of that brick of cheese.
Cool recipe mate, the good thing is that you can make it vegetarian
might leave out feta, otherwise, must try this
How do u keep the cheese from tasting like an ashtray?
Two things he mentions specifically in this video: keep the air/smoke moving and only do it for 20 minutes. This is consistent with my experience with smoking cheese.
