  • Typical of Goan curries, this is hot and spicy with a sour tang from tamarind, and it has thin gravy. I love the heat. It’s just so beautiful. Here I’ve pan-fried the sea bass fillet for a stylish, restaurant-style presentation, but if you want to turn this into a sharing curry to put in the centre of the table, cut the fish into bite-sized pieces and gently simmer them in the gravy until the flesh flakes easily. This quantity will then serve four to six people, and all you need with it is a bowl of basmati rice to complete the meal. Cod and pollack are other suitable fish to use, but they should simmer for just a bit longer.

    Plz guys don't. Tell any bad thing like this without knowing anything.. the work of a good chef is to innovate new idea from the older foods.. it's a new version of goan fish curry.. is their any prblm.. he is and he will always be my inspiration... Love u chef

    Oh for the love of God. It says “Atal’s”. He isn’t making it exactly like the Goan’s, he’s just working off their recipe and taking liberties.

      Frogtown Road 100% agree. If people don’t have something good to say... don’t say anything. Thinking out the box is how he got Michelin star recognition. People 🙄🤷🏽‍♀️

    I can attest that Cobia makes for a nice meaty fish to put in this curry. It has its own somewhat pungent, slightly oily flavor that complements the gravy well.
    Also, even though I might be committing apostasy, chicken thigh also works really well if fish is too expensive for your area. I wouldn't use breast meat, but thighs do work well.

    I'm surprised someone of Atul Kochhar's status has called this a Goan fish curry. Apart from the tamarind, I don't see any other resemblance.

    Maybe this is his invention but definitely it's not Goan fish curry we don't roast our spice and don't fry the fish for authentic Goan fish curry. For fish caldin we slightly dip the fish in hot oil for seconds just to retain the moisture in fish then add to caldin (mild coconut milk curry). and cook until 1boil.

      That's "Atul's Goan fish curry", that's HIS, can't you understand? Anyway, there're many ways to cook fish curry IN Goa; not everyone cooks the same!
      Btw, I would advise you to go and make your own fish curry and stop finding faults with other's cooking method. If you want to learned something here you're welcomed but keep your huge piehole shut; zip it 🤐🤐🤐🤐🤐 thank you very much!
      I'm a very good cook but I'm here to see the different techniques that others are using to make the same dishes.

      Brian there will be different types of fish curry ... but Goan authentic and traditional fish curry no one can make ... and they cannot keep Goan fish curry name to any of there dishes ... I am with you @ Brian

    I m goan and I know exactly how the fish curry is made in ma kitchen now 28 years we’ll all the ingredients were right but no one can make goan fish curry proper then goans not being disrespectful for ur work and effort as if u make paneer masala we can’t make it u ll make it better then us 🙂

    This is not Goan but fusion fish curry. He is using metal in a non stick pan and putting lemon on a hot pan. So much for one Michelin Star

    U may b d best chef but plz don't mess up with dis goan fish curry. No kokum used.v don't use tomato n lemon juice either. Nor di v roast the spices for dish curries

      You may know english but this is bad english with too many mistakes. I know you improvised so did the chef. The video doesn't say authentic goan fish curry, it says chef atul's fish curry. Know the difference.

    what.... fish curry with no fish flavor in the curry?.... nonono... such a wrong recipe...... too much onion paste... fish never gets cooked like this... u need to cook it in the curry so tht it takes the flavor...... disaster this is to a traditional dish

      Yes, Boss. In North India, we guys first deep fry fish, until Brown-Black n then Curry so it's very wrong way. But, Goan fish curry is Excellent n I agree with you. Thanks. Great.
