Fav Indo-Chinese Foods: Chili Paneer

- There are a few differences in how I make my chili paneer vs gobi manchurian, and I got so many requests for it that I figured it was worth a separate video.
Main difference is that I prefer to cook my paneer high and fast with a lil cornstarch to get it crispy instead of a full batter like I did for gobi manchurian. This just avoids the risk of the paneer overcooking and becoming rubbery.
To make this vegan, you can easily use pressed extra-firm tofu with the same steps.
Chili Paneer
Serves: 2-3
// INGREDIENTS //
- 16oz paneer (I used Gopi brand low-sodium, but my fav is Swad), cubed
- 1 tbsp cornstarch
- 1/2 tsp kashmiri red chili powder
- Pinch of salt
- 2 garlic cloves, minced
- 1/2 inch ginger, grated
- 1 scallion, roughly chopped
- 1/2 red onion, roughly chopped
- 1 green bell pepper, roughly chopped
- 1 jalapeño, sliced (+/- based on your batch)
- 2 tbsp soy sauce (or to taste)
- 1 tbsp sambal (+/- for heat)
- 2 tsp rice vinegar
- 1 tbsp ketchup
- 1/4 tsp white pepper
- 1/2 tsp MSG (optional if you don’t have)
- Slurry: 1/2 tbsp cornstarch, 1/2 cup water, mix until no lumps
// RECIPE //
1️⃣ In a large pan, heat up a high-smoke point oil (like vegetable oil). I shallow-fried mine but you can also pan fry!
2️⃣ Coat your paneer in cornstarch, red chili, and salt. Once the oil is hot, add in your paneer.
3️⃣ Fry quickly for just a few min and flip once browned and crispy.
4️⃣ Place on paper towel to absorb excess oil.
5️⃣ Remove excess oil from your pan if needed, heat it up again, then add garlic and ginger and sauté for a min.
6️⃣ Add onion, scallions, jalapenos and sauté for another min on high heat. Then add bell peppers and cook for a couple min.
7️⃣ Add all your seasonings and mix. Give it a taste and adjust as needed.
8️⃣ Add in your cornstarch slurry and mix well for 30sec as the sauce gradually thickens. You can add more water if you'd like to make it ~saucier~
9️⃣ Add in your paneer, toss, and serve immediately (so that the paneer stays crispy!)
Note: You can combine your sauces in a bowl beforehand to taste and adjust so its ready to go when you're cooking.

Mhm, I always thought Paneer was traditionally fried in Paneer Chilli. Because in restaurants here in India, if you order this, they will give your fried paneer with the sauce coated on it. Although while making this at home, I don't fry it (because I suck at frying) so I just... well... toss in the raw paneer. Tastes delish nevertheless

Ajinomoto is the brand. MSG is a scientific name for it, Monosodium glutamate. There are many brands that produce MSG and Ajinomoto is one of it.
And it is used in Ekta Kapoor's serials to plot a miscarriage 😂

Most importantly, there are a lot of misconceptions around MSG and the biggest one is that it's horrible for us and
that Chinese restaurant syndrome is legitimate even though decades of research have disproven this. A lot of
these misconceptions are not rooted in science, but rather racism.
In the 1960s, a doctor reported numbness and palpitations after eating Chinese food and playfully dubbed it
"Chinese-Restaurant syndrome". This caught on very quickly, very likely due to the anti-Chinese sentiments in the
United States in the 1960s. MSG, an ingredient often used in Chinese (and Asian) cooking was initially blamed
which prompted many researchers to study MSG. However, no negative effects were found. The only study that
did find something negative was when they injected rats with extremely high doses of MSG (we're talking 500x the
amount that the average human consumes). If you inject any rat with 500x the amount of anything that a human
consumes, it will likely have negative side effects regardless of what you inject it with.
MSG is derived from glutamic acid which is an amino acid that naturally occurs in many foods such as tomatoes,
cheese, and mushrooms. The glutamate in MSG is chemically indistinguishable from glutamate present in these
foods, and our bodies metabolize both sources in the same way.
Lastly, MSG actually has less sodium than salt despite providing SO much more flavor. Unlike MSG, excessive
amounts of salt has been shown to have negative health effects but yet we still eat large amounts of sodium from
other types of cuisines.
Like ANY food (vegetables, fruit, meat, nuts) people can have reactions to MSG, but the idea that MSG gives most
people significantly more negative side effects or "Chinese restaurant syndrome" is false.

Cool that you're not sensitive to MSG but some people are. Foods with MSG like pepperoni give me a headache so I avoid them because i know better.

I wanna get into Indian food but I’m not a big fan of overwhelming spices that lean towards more savoury dishes, it scares me away from Indian food and i know Indian food is good! Is this a good dish for that since it has a familiar Chinese cuisine palette?
The thing about Indian food is level of spice can be different according to one's taste buds. I am from India and I am not a big fan of spicy food so we don't add that much chilli powder. But rest of the common spices like tumeric, coriander powder etc are a must. Also chilli paneer tend to have sweet chilli flavour in general.

Recipe looks good, but the paneer is bad (super hard).

Since we know it's harmful, why hurt our body. We can't do anything about things we can't control. Chinese used to take it alot but now they've stopped, /stopping.
