As a Chinese, I love Indian food. Unlike Chinese and other cuisine, Indian food relys more on their spices and herbs to bring out the flavour of food which compared to many dishes that uses the meat (beef, pork, seafood) as the central flavour. Which is why, Indian imo has one of the best vegetarian food because their cooking style does not rely on the taste of meat to make food taste good.

As an Indian I've never heard of this South Indian dish or seen it. I'm from the east coast of India - Odisha. We have Chuda. Which is literally no cook. Lemons, ghee, jaggery, coconut grated. Wash the poha (flattened rice) and mix it all when soft and enjoy.

There are several mixes. It's insanely healthy. And nutritious. *And delicious.* (The same Poha is cooked in Western India). We also don't soak it & there's another dish : Chuda Bhaja It's traditionally toasted on hot sand. Mixed with mixture. 1 way. Another way is toasting it (or air frying it) and adding long sauted onions + green chillies. And pepper. *Delicious* And we love Dosa too. We are from Southern Odisha. My gran used to make the most authentic Upma & I do too. We like Idli, dosa, upma and Wada is called Bara ethnically in Odisha. Which is as much a local favorite as our evening snack aloo chop. Odia traditional dosa is thicker and is called CHAKULI. Chakuli with mutton is a classic. We love paper dosa as well. I make really thin ones. And we have dosa frequently. We recently tried chhetinad Idli & some curry with idli options. Bawnda chutney is also a classic.
