    How to make a Caramelised Red Onion chutney - full recipe
    I hope you enjoy the flavour of this caramelised red onion chutney recipe. its perfect to accompany cheese and crackers, burgers, salad and even on pizza such as goat cheese and red onion pizza. This recipe makes 1 litre or just under 2 pints of chutney. Pour it into a sterilised jar and it will keep for up to 12 months. Tie a ribbon around the jar and it makes the perfect homemade chutney present for those special occasions. Happy Baking everyone and Enjoy!
    TIMINGS:
    • Prep Time: 15 mins.
    • Cooking Time: 1 hour 30 mins.
    • Total Time: 1 hour 45 mins.
    SERVINGS
    Serves 20 people (Makes 1 Litre).
    INGREDIENTS
    • 4 tbsp Olive Oil.
    • 3½ pounds (1.5kg/53oz) Red Onion, thinly sliced.
    • 1¼ cups + 2 tbsp (275g/10oz) Brown Sugar.
    • 3 Garlic Cloves, crushed.
    • 1 tbsp Dijon Mustard.
    • ¼ tsp Dried Chillies.
    • ¾ cup + 1 tbsp (200ml/6.8 fl oz) Red Wine Vinegar.
    • 4 tbsp Balsamic Vinegar.
    METHOD
    1. Place the sliced onion in a large, heavy-based saucepan and mix in the olive oil.
    2. Gently fry the onions over a medium-low heat for 30 minutes, stirring regularly.
    3. The onions will be softer but not browned and reduced in size by half.
    4. Add the brown sugar, red wine vinegar, garlic, mustard, chili flakes and balsamic vinegar.
    5. Stir to combine and increase the heat until it comes to the boil.
    6. Reduce the head to a medium-low heat and simmer uncovered for 60 minutes.
    7. Stir occasionally so it doesn’t stick to the bottom of the pan.
    8. The mixture will thicken as it cools.
    9. Spoon the hot chutney into cooled, sterilised jars, then seal and label.
    STORAGE
    • The caramalised red onion will keep for up to 12 months in an airtight container that's stored in a cool place.

      If I want to make a big batch of dis, shall I just add some acid pectin as da preservative element? Or perhaps U have some otha ideas/tips on how to make these last longer..thanks^^

      @@yukilee2215 No need to add anything just make sure to sterilise your jars and lids and fill the jars while they are warm when you put the lids on it creates a seal. leave in a cold place - don't open until you need to use it. I make big batches of this too as love it so much. Once I open a jar I pop in the fridge. The sugar,vinegar helps to preserve it along with the cooking process and sealing the jars x Hope you like it - I'm down to my last jar so going to make it again next week x

    What a God send,all my Red onions from sets ran to seed and will not store,so this is a perfect remedy for my dilemma,thank you for the video,👍

    This might be a stupid question Scrummy but do you put the relish on the pizza while it is cooking

      Not at all no such thing as a silly question. Yes I dot it all around the pizza before putting it in the oven. Rocket is lovely on top when you take it out and season with salt and pepper. x

    I will be making this but can I ask why the music, I and a lot of my friends hate having this background distraction when describing the recipe 🤞

      It's fab I've just finished making a another batch. When I open a jar I leave in the fridge and lasts ages. The other I just keep in a cool place x

    I just did enough for one jar to start with and iv got down the times a bit. Got bout 10min left after adding the ingredients instead of im hour im doing 30ish min. But its looking dry and not as juicy as yours. Maybe next time ill just to the full amount

      Yes maybe a full batch would be better. I've also made a small amount in a pan and didn't find it as juicy I think the liquid evaporates quicker when only a smaller batch. I made a full batch last weekend just 4 jars - tried some last night on pizza and it was lovely. I plan on making another batch this week for a Christmas market in our village.       @ScrummyTV yeah to be honest seen how must 1/3 was and looked big but reduced to not much and think i will fly through them as I'm doing pizza tonight and already snacked on them a bit!

      If open I leave it in the fridge otherwise I leave it in a dark cool cupboard will keep for 12 months or longer unopened. I just had some there with crackers and cheese and my 12 year old tried it for the first time and loved it @@PopcornPlaya8589

      Did you use red onion and brown sugar? I've made this with white onions and it wasn't as dark in colour but still tasted good x

      @@ScrummyTV Yes followed the recipe as best I could but with substitutes of 3 tsp lazy garlic, a freshly chopped red chilli and some Colmans mustard powder.

      Not really sure then any changes you made wldn't impact it. Here is some information that might help.
      Cooking time: Caramelizing onions requires sufficient cooking time to allow the natural sugars in the onions to break down and develop a deep brown color. If you didn't cook the onions for long enough, they may not have had enough time to caramelize fully, resulting in a pale color.
      Heat level: Caramelizing onions requires low and slow cooking over low to medium heat. If the heat was too high, the onions may have browned quickly on the outside without fully caramelizing, leaving them pale on the inside.
      Onion variety: The variety of red onions can vary in color, and some may naturally have a paler hue. Certain varieties of red onions have a lighter, pinkish color, and when caramelized, they may not turn as dark brown as other varieties.
      Freshness of onions: Freshness can affect the color and flavor of caramelized onions. Older onions tend to have a higher sugar content, which enhances caramelization. If your onions were relatively fresh, they might not have caramelized as deeply.
      Caramelization technique: The technique used for caramelization can also impact the color. For darker caramelization, it's essential to cook the onions evenly, stir them frequently, and avoid overcrowding the pan. Uneven cooking or overcrowding can result in uneven color distribution.
      To achieve a darker color, ensure that you cook the onions slowly over low to medium heat, stirring frequently until they reach the desired caramelized color.

      @@ScrummyTV Thanks for your detailed reply. From what you say I think the red onions I used may have been too fresh and not the deep red variety. I shall try lowering the heat a little more next time and cook for longer. I’m actually onion intolerant lol so can’t try out the chutney. I made it for my husband who says it still tastes okay despite its appearance.

    Noooo Garlic !!! Please?? In any dish you are making, you either use onions or garlic NEVER BOTH !
