I expect the gear shift issue is a memory muscle one as I used to play with a wheel, pedals and gear shifter at home, only to still suck on the rare occasion in the arcade as the stick is on the right and has a different feel to what I was used to.
There's no different options compared to regular Daytona. Even though I'm playing solo, I think the fact the cabinets are in link mode still changes the colour.
It was just the camera on my phone a mi lite 11. I bought this thing from Amazon that lets you strap it to your head. The only issue with it is I've no idea if it's recording what i want when it's strapped to my bonce, because I can't see the screen.

I'm UK based, so the gear stick on these is the wrong way around for me compared to when I'm driving a real car too.
Oh. You've got the multiplayer car despite going solo. Is that a Sega Racing classic thing or are there options im not aware of?
