My grandfather was a very strict teacher when it came to equipment (he lived through two World Wars and the Depression in between) - you always, always cleaned the equipment when you were done using it. Cleanup was a part of the job, not an option. It didn't matter if it was just a screwdriver or hammer, you cleaned it up when you were done. This engine is an example of why.
I've got a 1997 Exmark 48" with 770 hours on it. Still runs and cuts like a champ. While I do clean the engine once a year, I've never taken off the cover. Got a weekend project now.

Don’t use a pressure washer. Water hose or compressed air only👍. Other than that awesome video. Wish I’d have seen it sooner.
Bought a John Deere with a Kawasaki like this. It was as filthy as in the video. Sprayed WD-40 let it soak in and hosed it off In my lawn. Didn’t kill the grass either. He’d to do that 2 times in a row. It was bad.

Yeah I see more then a few engines look like this, most of my customers don't know a 3/8th wrench from a torx bit, sad really, they go out mow mow mow, and expect these mowers to run forever with 0 maintenance, they are the same way with their vehicles.

if you upgrade the airfilter to a canister filter, should you replace the jets as well? have you seen any issues with it running too rich or lean?

If that engine was maintained perfectly, how many hours can you expect out of it?
I've got a Kawasaki 27 horsepower running on one cylinder. Does that mean it has a bent push rod on the side that's not firing is that an automatic? I've ordered a new coil.
