Even though in the sentence "너무 많이 먹었어요." 너무 means too much, why put 많이 aswell? I have seen it in other cases two where too where two words that basically mean the same thing are used in one sentence.
너무 doesn't mean "too much quantity/amount" but simply "too much (adjective/adverb/etc.)," so it's used together with adverbs to explain what is too much. 너무 빨리 "too quickly," 너무 많이 literally means like "too a lot," etc.

Good, "엄청" is same meaning in this context. So you can say "엄청 맛있어요." "정말 맛있어요." "진짜 맛있어요." all of these have same meaning :)
