I've seen a recipe which called for the sheep ricotta & goat ricotta. If you can't find sheep than goat would be my second, then cow as last resort! The taste & texture is noticeable with different ricotta.

Joe could you use the instant coffee or Expresso mix instead of coffee grounds? I do not drink Coffee but i love my Cannoli. My father was born in Sicily and was quite the cook like you..I love watching you cook its like i was home again as a child growing up where everyone was in the kitchen and we all cooked lol lol Oh such happy memories.. At 83 i still cook all my own food and at Christmas i make Pita Piata. Do you have a recipe for that? Each family had one i was told.. If so maybe you could do a video on this at the holidays. But you can not make a small batch of them..lol Typical Italian we feed everyone lol lol

Hey Joe, great cannoli recipe. One trick I learned in making cannolis to prevent them from getting soggy if you want to make more than a few, is to paint the inside of the cannoli shells with some chocolate before filling them. That way you can make a couple of dozen filled shells ahead of time, store them in the refrigerator and they won’t go soggy on you. The shells will stay crunchy indefinitely. You don’t have to add in the chocolate chips if you paint the inside of the shell. Be sure to let the painted chocolate dry completely before filling the shells. Good luck!

In your website you only show cannoli dip, not the recipe for the canmoli filling, the ricotta. You don't even give measurements for the mascarpone cheese to include into the ricotta. And as many recipes I see for cannoli, even in Sicily, they NEVER even suggest using mascarpone cheese. Why not just throw in Nutella? or peanut butter? Whoever heard of adding mascarpone cheese? Geezzzz

Joe, This is the second video of making Cannolis and neither one, in my opinion, left out a very small tip but so important and that is oiling or dusting the tubes so that the shell doesn't stick as you try to remove. Once I did that the tubes slid right out. Just to be clear this was one of the best videos and I can't wait to try your recipe.

Your website lists 2 tbsp Cocoa in the dough resize but I didn’t see you use it. Mine came out looking burnt due to the cocoa but tasted great.
