When I was a kid, my family, grandparents, parents, and us kids all made cannoli together, 100 at a time. I have also made mini cannoli, added orange zest to the cream, and dipped the ends in chocolate shavings with orange zest.

@@vincenzosplateI can't narrow favorite desserts to one any more than I can narrow favorite works of Classical music. I do have the fondest memories from the years we lived in NYC and would go with a group of friends, for my birthday, to a delicious dinner in Chinatown, followed by a walk over to Little Italy for cappuccino and fresh cannolis. All that was missing was the Verdi.
This reminds me of the time I went to Napoli with my family. Their cannoli were delicious.

This is also the reason why in pastry shops, here in Italy, the cannoli are normally filled with that ricotta cream when the customer buys them, precisely to avoid that if they remain for a while with the ricotta filling inside, the fried waffles soften and lose their crunchiness, while it must remain crunchy. This, by the way, is also a sign of freshness of these delicious desserts. If you find yourself holding a very soft cannolo (singular) and no longer crispy, it means that the one is not very fresh.

Great video Vincenzo! There was one thing I learned from my parents as a kid. Never eat a cannoli that was filled too early. They are mushy and gross.

Did you know that the reason why marsala has such a different flavor compared to other wines is because they leave the barrel open, so the wine is essentially oxidized.
You could say that it's wine made the wrong way, taste is good though so...

Why you didn't roll out dough multpile times like recommend others bakers? Most recipes order to do that and reach more bubbles on surface.

Why go to all the effort to make the cannoli shells from scratch when they leave the cannoli sitting there in the display case, already filled, going soft, soggy and horrible? By the time you bite into it, the cannoli has already lost its crispiness. The only place I know of in Melbourne that pipes them fresh is Cavallaro in Footscray.
