    These arancini make everyone happy. I added peas to the sauce. Do you think Gordon will enjoy it?

      Gordon will never ever simply try cooking a traditional dish like this to perfection. Those higher level chefs want and are expected to be "creativ" too. So they allways will add or change stuff. Not always to the best of the dish...

      I made them a few times, but I find them a bit too rich for my tastes. Incredibly tasty, but I tend to leave out the stuffing or keep it to a bare minimum.

      Vincenzo we use saffron in the rice.. Vincenz I heard they now in Sicily filll Arancini with Nutella !!

    My wife has always liked arancini when out at pubs or restaurants so I eventually decided to try and make some. Fortunately, I found Vincenzo's Plate because I followed this recipe to the letter.. very carefully and exact on ingredients, method and timing. The results were spectacular! This recipe made ten large balls. My wife said: "these are easily the best I have ever had.. layers of flavour and plenty of filling inside.. the best by far". As we found one ball to be enough when served, we invited friends over to try them. They said "wow, wow, wow"! Need I say more? THANK YOU Vincenzo - this is a terrific recipe. I would upload photos if I knew how - they look so good and taste absolutely amazing. Best online recipe I have tried in all these years!

    Hello Vincenzo. My name is Anthony and i am Sicilian and just wanted to say that those Arancini balls are amazing and some a day i will make them just a like a that. Gordon Ramsey take some lessons on cooking not only these but all Italian food as well. Gordon you cook Italian food like a shoemaker.

      @@terrywilder9 I dont know if you know, but Chef Ramsey made Carbonara with the green peas. That is why they say it. Italians are a bit sensitive when it comes to food, specially recipes that been the same for generations. You cant call something Carbonara and then add some other stuff, its not the same. I understand that maybe you want some vegetables or so but make a salad then as a side dish, dont add peas and whatever to Carbonara. That is why they joke about Ramsey. But am sure they still think he is a great chef, just not with Rainbow Carbonara.

    A work of art!!
    I only added 1 tiny little extra...2-3 cloves of crushed garlic when cooking the onions. I love the garlic aroma in my italian cooking.

      And that's perfectly fine; garlic has a very strong flavour that some may enjoy or dislike; it all depends on how strong we want our garlic to taste. You can always change the ingredients to your liking.

    Vincenzo recipe is wonderful. He provides the small details you need to make it a success. He is a real traditional cook - his recipes taste so much better x 1000000 than “celebrity” chefs like Jamie Oliver, Gino etc.

    I was afraid to change anything from your perfect recipes, but I tried frying half in oil and the other half in the air fryer. I couldn't taste the difference. I suggest using an air fryer if you're cutting down on fried foods. Delicious!

    I use arancini mould, easy to use and all equal size. Amazon sells them . I saw them using it when I was in Erice, Sicily. They come in different sizes. Bonci in Rome makes a good Arancini Carbonara. A must try ! Thanks for sharing. 😊

    Excellent! There is a hockey arena in Ontario which used to have the best arancini! No meat, just cheese, but so good with marinara. I would sneak one now and again, while waiting for my kids to get on the ice. Seriously, this small town arena had probably the best arena food in 🇨🇦 .     I had leftover Vincenzo's Saffron Risotto & Vincenzo's Meatballs in the freezer.
    Defrosted the meatballs & made Vincenzo's Super Big Sicilian Balls with this recipe (egg wash). Added the mozzarella.
    PERFECT YUMMYYUMYUM!
    The only problem was that I only had enough risotto to make 3 balls.
    Will do this recipe to the letter next week.

      It's not even a week later & he wanted more. And... they're gone. 🤷‍♀️
      Next time, I will coat a couple of the mozzarella cubes in each one with TuttoCalabria Explosiva & make bombas.
      I really liked your tip about soaking the saffron overnight (27 hours) for the risotto. The color was intense & lovely. The saffron soaked for just 4 hours wasn't quite as vibrant.

    I do mine the traditional Sicilian way, but I also like to make them with just a real nice prosciutto, pecorino, and fresh mozzarella mixed into the rice...my guests prefer the prosciutto version...thank you Vincenzo from an American Abruzzo 😊

    Ciao Vincenzo, thanks for sharing this amazing recipe. The only missing ingredient that makes it perfect is the saffron, which gives the original flavor and touch to the rice. I guess the vegetable broth is a cheaper alternative, and the arancine will taste just as good. Keep up the good work, your channel is very entertaining and you're a wonderful cook! Cheers

      @@vincenzosplate I definitely will. I've been in the lovely island of Sicily this Summer for the first time and I loved it. Arancini was one of the foods I liked a lot there and when youtube algorythm suggested this video, i watched it and Arancini is now the next recipe in my "to do" list. I am from Cyprus and I love mediternean cuisine. Cyprus also happends to have a somewhat similar traditional dish that instead of rice for crust it uses bulgur wheat and its called "Κούπες" in Greek or kubbe/kubbeh/kibbeh in Arabic.

      @@vincenzosplate It was great, but I messed it up a little bit by not adding enough meat, so the rice to meat ratio was off. But eh, now I know for next time.

      You can serve your arancini with tomato sauce or you can also go all out and try a pomodoro dipping sauce.

    Ciao Enzo, Since I'm the Sicilian they gave me the job of making arancini for Christmas. I'm using your recipe for arancini so i know it will be delicious and I know everyone . Question: I would like to assemble the arancini in advance if i can. How long in advance can I assemble the arancini (everything except egg, breadcrumb) and keep it in the refrigerator?

    It's strange. Until I moved to Australia from NJ, I never saw this dish and my grandma was from Palermo. It's tasty. Nice recipe. I would definitely want more sauce on my plate. wonder if Malta was the influence for this dish. The peas are always used in Maltese dishes.

    These look amazing and delicious 😋. I wonder, can you use panko (japanese bread crumbs made by electrocuting the dough) instead of normal breadcrumbs?
