As a kid, I enjoyed Cannoilis whenever we had a party at a restaurant, but one summer trip to Colorado, we were so burnt out from travelling that we stopped at a restaurant that served REAL Italian food where the staff was small but INCREDIBLY swift and the owner of his family-owned restaurant was so nice and made sure everyone was comfortable despite having to run around and serve us himself... he makes his Cannoilis from scratch and it was the best damn thing I have ever tasted! Definately recommend people go there! ^^

We used to visit my relatives often and I remember one of my cousins in particular who would go to the countryside and buy the freshest sheep milk ricotta from the local shepards and drain it overnight and then make the filling. The shells were bought from a friend who owned a shop called " La Favorita". Absolutely delicious.

This is now on my bucket list. True artisans,
Maybe someone can answer a question of mine.
    Grew up in Northeast U.S.
The Italian restaurant my father and I frequented got their canolli from a bakery in Philadelphia called Isgro..
Instead of ricotta, they use cream. Half chocolate/half vanilla. Heard one person refer to it as "pudding canolli".
The majority of the Italian bakeries I've visited use cheese. Does anyone know if there is a certain region in Italia that makes
these cream canolli or is it an American invention like duck sauce in Chinese restaurants?
