The animators included a tiny little detail that adds so much to this. Starting at 2:41, as Fizz sings "So this is it", there a tiny little pause where here looks to the side as he second guesses whether he actually wants to burn this bridge before calling Mammon out. It lasts maybe 5 or 6 frames but tells us that this is still a difficult decision for him to make.
Mammon was enjoying it until Fizzaroli finally called him out at the very end. He probably realized that he was about to quit and tried to get him back. It's not the fact that he's smart, but the fact that he's clearly blatantly exploiting Fizzaroli for the past 9 years and no one could do anything about it because he's just that powerful. If Ozmodius wasn't there to back his lover up, Mammon would've killed Fizzaroli instantly
I think Mammon was pissed at Fiz' song, but was greedy enough that he was willing to be the butt of a joke if it would make Fiz more popular and earn him money. It was only when he realized that Fiz was serious that he got really angry.

As someone who quit a job with a toxic boss with no notice, I'd absolutely hit a wall and had the biggest anxiety and panic attacks whenever they called, I wish I'd said f you and quit a lot sooner! This song absolutely hits
I feel this song on way too deep a level. I’m Fizz and Mammon is my grandmother. 30 years and I hit the wall before I was even an adult. Unable to escape due to financial abuse(among several other) seeing no way out but to try and wait out her life and hope she left me the house in her will(fat chance even before my silent fuck you). My loving partner is Ozzy. Helped me arrange a risky escape without my grandma’s knowledge, got me more than 1,000 miles from here, and I’ve been with him getting better and improving both him and I more and more in the 2 years we’ve been together.
It's amazing to me how fast Fizz went from just a background character in Blitz's past to a central character in just the span of two episodes. And this song just puts the icing on the cake really nicely; I fucking love this guy, I love his stable and healthy relationship with Ozzie, and I hope that when the show plays-out completely that they're _both_ just as fine as he faked saying in his dressing room.
