Never used par boiled nothing so I'll just figure out how to do it with regular rice.Sure looks like something we like eating around here,thanks!
You can use regular long grain rice just wash it before, it will be fine. Thnx

Why coconut milk?
@Lawrencewife777, coconut milk is rich and it gives the spinach a nice flavor. Hope u like it.
@whynotcook when you simmer do you cover the pot?
@gisxny, yes I left the pot covered with flame turned down low. Good luck making the dish hope you love it.
Would've been nice to have the recipe included in the description so I can copy it down all at once.
