    Thank you so much for sharing this recipe! This bread holds a very special place in my heart. I'm from Vietnam and I ate it all the time whenever I passed by the bakery when I was a kid.     I remember when, in about 2004-5, the first one opened at Victory Monument. I was living in Din Daeng, and going to Thai classes downtown. I almost never missed buying a Mr. Bun after walking down to VM, before going up to the Skytrain every morning...really brings back memories. Yum. Thanks for this recipe and video.

    Yehaaay! We never have to fall in line again... i think you may have put these roti guys outta business! 😁 you make things look so easy! Worth a try! I remember eating these roadside "pancakes"... its called roti too, i think... they'd put condensed milk n sugar! Then they'd roll it like a cigar or burrito! Those were the days! You're amazing!     i made this..it's so yummy, my husband and my daughter love it.. i used white wheat flour instead of bread flour (I don't know if they are the same) :). I just had some butter leaks on my buns, don't know what i did wrong, but i'm sure i did the same way you did it (except i did kneading by hand)...well maybe need more practice...:) This recipe is Amazing... thank you so much!!! Hope i can post the photos of my bun here.

    oO funny name, in mexico we call them "conchas" or "conchitas" they are not only coffee flavor but vanilla and chocolate too.. as a tip, the traditional way to eat these is with hot mexican chocolate and you grab a piece of the bread and dunk it on it before eating it... also with "café de olla".

      WiseSalamander I know this is super late but Mexican coffee buns didn't originate from Mexico, the name is misleading but it is actually originated from somewhere in Asia.

      Here in Hong Kong we have "Mexican buns", which have the same topping without the coffee flavouring and sometimes have fillings like custard, taro or even char siu.

      @@adrieltinghenghui6205 : In México we have a wide variety of pastries, hundreds of different kind of flavors and dough; each state in the country has it's own and distinctive cuisine, but these buns are not Mexican, I don't know why somebody would call them "Mexican buns". We have a type of pastry called "Conchas" that have a similar sweet and flavored crust on top (but no coffee flavor) and are fluffy but no butter inside. Do you have an idea why they call them "Mexican Coffe Buns"?

      @@Jeffffrey0902 : I have had those in San Francisco's Chinatown, with a yellowish sweet crust and a fluffy texture, much like "Mexican Conchas" but with fillings, except Mexican Conchas do not have any fillings, other Mexican pastries in México do have fillings but not the Conchas.

    It reminds me a little of Mexican pan dulce (sweet bread) pastries. There are conchas (or conchitas) which have a flavored/colorful sugar shell baked onto the bun and which I think served primarily as the inspiration for this treat, polverones (shortbread cookies with a fatty coating), campechanas (rectangle-shaped sweet bread with a glaze on top, similar to a long john doughnut), etc.

    It used to be the fad many years ago in Singapore. In the past, you could find many shops selling these buns. Now it is much rarer.

    I'm mexican and while I'm not an authority on this I can say that these buns sort of remind me of Conchas but the thing that you call the cookie dough is made with vegetable shortening, powdered sugar and flour. Maybe they are two different things. Anyway. I'll give this recipe a go to see if they are similar or not.

      Emmanuel Campero That makes sense! In Chinese bakery, they called these buns "Mexican bread". I've always wondered why, and that would be a good theory.

      I think they are very similar. I'm mexican as well and I believe there must be some influence from "pan de muerto" too, as it tends to have a lot more butter than your everyday "conchita" making the inside reeeally soft and delicious. Just like these Rotiboys!

      Please stop using vegetable shortening, they added in Trans Fat and lots of chemicals which are very harmful to our body, Margarine is better as it melts when I pour in hot water but veggie shortening doesn't even I pour in boiling water in it. Scared me to death when I saw it.

    I did not know it was from Mexico until now. I had it first in Singapore they call it Kopi Bun and served with soft boiled eggs with seasoning + Coffee with condensed milk or tea

    Good job, those look great. Reminds me of the conchitas we love so much. The conchita is called this because if you look at the design of the crumbly parts. it is supposed to resemble the sea conch (hense the name Conchita or Concha) using the spiral sweetness. Your version is just as nice .and now i know how to make one. Thank you.

    I have tried this heavenly coffee buns and all my friends really love it. I just have some concerns.
    How can I keep my buns round and tall? My oven is too small to take in 12 pcs. Can I bake it in 2 batches? Wouldn’t the second batch be overproofed? Or is it still ok? Hope to hear from you. Thank you.

    they are gorgeous! i have a couple questions:
    1. While you were shaping the buns, you didn't cover the rest of the dough, wouldn't they dry out?
    2. My buns are always sealed very tightly, but while doing the 2nd proofing, sometimes the seal opens up, why is it so? did I under knead?

    Rotiboy is actually based in Malaysia haha ! 'Roti' means bread in our language . I dont know why it is called Mexican bun 😂 probably bcs it is inspired by concha's fluffy texture and crunchy topping? Idk . Anyway...it tastes and smells amazing!! Love itt...one is definitely not enough for me

    Hi I saw your “tangzhong “ recipe for bread , if I want to bake coffee bun in a small quantity ( my family is small) . So the tangzhong quantity have to reduce or I just follow the amount you’re doing . Thank you 🙏🌹
