After 2 failed attempts I finally succeeded today and it was amazing. Just a few tips for anyone that lives in a WARM and HUMID area: 1. Make sure the butter that you put into the dough is soft but the dough should be cool (otherwise when you knead the butter will melt really fast and you will end up with a soggy and soft dough, and when you bake your bread will flat out) Just put your dough into the fridge for a couple minutes before adding butter 2. Use instant coffee powder rather than coffee that you brew yourself, cause it might cause runny topping. I also find the coffe flavour to be stronger and smells better 3. Personal prefrence but I add 5gr of cacao powder to enhance the coffee flavour 4. Put your topping in the fridge for 10 minutes before piping onto the dough, this will make sure your topping melts beautifully in the oven 5. Use all of the topping if you want your bread to be fully covered. More is better
Just made this. The recipe is legit guys! The crust really does sing like that when they're still hot. The only difference was mine don't look as nice cos the topping overflowed but the hardened bits at the bottom stayed crispy even when they're cooled. Yum! Edit: Best eaten warm when crust is crispiest. Bottom bits stayed slightly crunchy for a while. Topping texture turned somewhat cakey the next morning but still good. Bun is like light brioche. Sweetness is just right. I only had salted butter with me but still taste great. My caffeine addict fam prefers stronger coffee taste so I'll add more next round. This recipe is definitely a keeper.
@@cactus8037 the hydration ratio for this recipe is not that high so I'm not sure why yours turned out wet. The dough should be soft and slightly tacky but still manageable. Could be due to humidity or flour types? Do give it another try. If you still find it wet and sticky try leave it covered in the bowl for around 15 min, it should be less sticky by then. You can search RUclips for Bake with Jack. He's got tons of helpful tips on breadmaking.

There a couple of things that needs to be noted: If you are putting butter as a filling for your bun, make sure you cut the butter into cubes first and put them in the freezer for at least 40-60 mins. That way it’ll melt perfectly when you bake them
Tried this today and a few things to share: - this recipe is a keeper! - the dough is quite oily so I had a hard time pinching them to form a ball… some parts kept splitting apart even if I tried to pinch them back together. The hand tension method doesn’t work for me: I just pinched and push in the pinch marks xD - I split into 8 buns instead, each with 12g of the coffee topping. I had extra coffee topping left so I squeezed some to bake, and it turns out wonderful as coffee biscuits.

I tried this recipe yesterday and it's one of the best recipes on RUclips! I've tried several recipes and it turned out dry and spongy. The topping on this bread is actually phenomenal and the bread is so soft🤩 As many others said, the coating will be soft the next day, but if you want it to be crispy (and warm) again just reheat it in the oven again for a few minutes! @@ashley-fg1te ah I heated up the milk in the microwave for a while to make it warm (make sure it's not too hot) before putting the yeast in, since yeast works best in warm tempratures. (except for the butter cubes for the inside of the bread) Don't dump in salt straight into the yeast mixture, salt kills the yeast. Instead just mix the salt into the flour evenly first before putting it in the wet mixture. Also, this might seem a lil dumb but make sure that your fan is turned off when you measure ingredients on a scale bc it may affect the weight 😁 hope this helps!

I literally just finished making this 15 minutes ago! The bread is so soft and tasty but I failed making the coffee crust. The taste is 10/10 but I think I put too much water when making the coffee as I don't know how much is 5ml and it turned out watery and melted too much in the oven. I will be making this again tomorrow, correctly this time! 😌✨

I made this today and it was perfect! I was a little bit worried when kneading the dough with butter as it was messy, but it turned out good after 10 minutes, like you said. I also needed to adjust the timer as I was using low watt oven which only 550 watt. So instead of 20 minutes, I baked it for 30 minutes. But the result is amazing!

Tried this recipe last night and came out really tasty! I substituted bread flour with all purpose flour so it was less chewy, but still edible 😄 I added less butter ~1g inside the bread because i thought there was just tooo much butter in the dough!! But there wasnt any creamy filling after baking, so I will try again next time sticking to Nino's recipe 😅

- 200g Bread flour
- 3g Salt
- Knead for 10 minutes

●TOPPING: - 3g Instant coffee

Tried this recipe last night and came out really tasty! I substituted bread flour with all purpose flour so it was less chewy, but still edible 😄 I added less butter ~1g inside the bread because i thought there was just tooo much butter in the dough!! But there wasnt any creamy filling after baking, so I will try again next time sticking to Nino's recipe 😅
