I like it with the skin left on. LOL, just like Mom used to make it.
When I first tried these fried eggplants, I was hooked! These are so delicious and if you want to go further just dip them with a bit of mayonnaise and fly to the moon. Lisa
I used flour and egg to do mine in instead of bread and egg I think it makes it a lot tastier then I salt and pepper it turns out really yummy
You have to salt the slices and put them in a colander and a bowl underneath with a weight on top of the slices. Live them there for about on hour until all the juices, that are bitter to taste, comes out of the slices. Rinse the salt off and pat them dry with a paper towel. Then, and only then, you are ready to cook the eggplant any way you like. I love them fried with an egg wash and bread crumbs. Use little oil in the skillet because the slices will absorb the frying oil. Once fried, put the in a paper towel to remove excess oil.
aint nobody got time for dat
No one got time, make it and eat it😂
So u don't even need alot of oil just a thin layer huh!? I just made a batch n now I'm noticing some aren't as crunchy probably cuz I put too much oil next time I know!!!! Use a very thin layer of oil to fry the egg plant
Glad you liked the video, Brian Fields! Especially if it inspired some sweet memories of you grandmom. She'd be proud of you for cooking.
Thanks so much! I used Italian bread crumbs and they were awesome. My grandson came in just in time and it almost brought tears to his eyes. He said "Gramma, do you know how long it has been since I had these?" His Great "Poppa Honey" used to fix them for him.
Thank you for your question! Coconut oil will work just fine in this recipe and add a nice flavor to the dish. Enjoy :)
Just made these with Panko breadcrumbs, Amazing. I kept my skin on too, but striped it like another reader said.
I love this recipe
Thank you...gonna prepare this right now!🤗
I salt, rinse, and drain it too. I've tried it both ways and I think it tastes better and has a better texture if it's salted first.
A bsolutely The Best resipe in the World ..Amazing , thank You
Great video, this is how my grandmom made eggplant and how i will attempt to do so later today
i have always dripped them in flour first then egg and final step breadcrumbs . it helps to make them not soggy
Definitely will be trying this!
I love fried eggplant and zucchini. Thanks for the tip of adding Parmesan cheese.
To prevent eggplant sopping up your oil, shake it in a bag with cornstarch, then proceed with your recipe.
Ohhh wow thanks for the tip.. wish I would’ve seen this yesterday.. as I made it for supper lolz … so next time !
How easy it is to cook Fried eggplants. The powder is like something we want to taste when they are prepared in a kitchen.
MMMM EXACTLY HOW MY MOM MAKES THEM. I JUST LOVE FRIED EGGPLANTS ❤
These were good. I further seasoned them with garlic powder, dried oregano, and Italian seasoning added to the breadcrumbs. Yum!
Did you do a salt soak with them first? Or just as is?
My favorite!!!
Too bad this gets peeled. The skin has a lots of nutrients (ex: potassium, which helps to lower blood pressure).
no need to peel at all
You think there's any nutrients left after frying the fk out of it in oil? ...lol. Idiot.
@@panteraxenos4789 Potassium is a metal that survives fry-temperatures. Here's the nutritional data for Fried Potato Skins. Notice the value for Potassium and other nutrients? LOL. Idiot.

This was soo friggin good!!!
Looks good
Thank you for your question. You can certainly season with salt and pepper to taste, or use seasoned breadcrumbs in this recipe. Happy cooking!
easy and delicious
Just used this recipe and it turned out awesome. Thanks
This is yummi! And if you ad parmesan to the brad, you won't need salt!
Wow eggplant
very nice
YUM!
I like to fry them and also like them baked in the oven. I will have to try to soak them in salt water.
Me too!
Wow
Ive always sprinkled with salt to drain the moisture. Then rinse them and let air dry snd dry any excess moisture.
Do you need to salt the eggplant slices before breading them in order to draw out the bitter brown water from the eggplant first?
Sure you can use an egg substitute or try using oil instead!
thx
Good Lord, forget the canola oil! Fry them in olive oil...way tastier. (Also good idea to salt, sweat, and dry the slices before coating/cooking)
I use a combo of coconut/peanut oil with some panko in the final breading mix.Awesomness!!!
Parmesan cheese already salty isnt it? I would add a tiny pinch of sugar. For savoury 90% salt 10% sugar. For dessert 90% sugar 10% salt
+Tippy Wong Thank you!!
Leave the skin on, use Olive oil instead for frying.. I use gluten free flour and seasoned bread crumbs, drizzle on some marinara for a nice side dish.
can i use coconut oil
i could play virtual golf to this music.
What is the name of the utensil used to peel the eggplant?? I want to be able to look for it easily when it comes time for me to make do this.
A vegetable peeler will do just fine
I took the skin off, so there. Also, slice them lengthwise and they don't absorb as much. I butter them afterwards because I'm not afraid of butter
Not afraid of butter either! In fact it's one of the food groups to me!
you should always salt and sweat eggplant 30 min. before cooking, it takes out the bitter taste j/s
jeff duvall You're right and I was wondering why they didn't do it. I think that's necessary.
how do you do that ? what does that mean ?
jeff duvall how do you sweat it?
jeff duvall 40ml
I splash a heavy dose of lemon juice on the slices and store them in the fridge while preparing dinner, Than after i had invented this, I saw it on tv, arrrrrr!
This is a good base but too plain for me. I slice the eggplant, salt it, rinse it. Let it drain and then coat slices in seasoned flour, then dip in egg wash, then seasoned breadcrumbs with parmesan and bake or fry....soo good
I am 13 and I interesting in cooking soo yay
Dip in ranch and marinara
Do u HAVE to peel the skin off?? I like skin on potatoes egg plant ect..... would it cook the same with the skin?
You can keep the skin.
No salt and pepper?
The link to the recipe page isn't working.
No spices at all?
what if i dnt have parmesan to mix in bread crumbs wat should i mix instead of parmesan??
Some good substitutes for Parmesan cheese, syd claire, are Romano, Asiago, or even a hard Cheddar. Enjoy the eggplant!
+syd claire --You don't have to use Cheese at all. You can dip into flour, egg then bread crumbs.
Mmmmmm...cheesy crumbs..
Can I substitute flour for the bread crumbs?
Yes but the batter will come out different.
I'd add garlic powder, cumin, and coriander. I'd also fry them in olive oil.
Can I use flour instead of bread crumbs?
Yes you can
Is there a substitute for the eggs that I can use instead?
possibly soy milk or non fat milk so the bread crumbs can stick.
My mom always used milk. Can try plant-based.
Eggs whites would be good too right? That step is mainly for "glue" I'm assuming
"Stickiness" is what it's all about, Aelahuntress X. You'll have a fair amount of stickiness using just egg whites to hold the bread crumbs onto the eggplant, but using the yolks, as in using whole eggs for dipping the eggplant slices, will hold the crumbs more securely.
Allrecipes thank you!
Gah this is why I watch FoodWishs channel
You don’t salt the eggplant?
can this be done without using breadcrumbs?
Hi, taineekimi - There are many options if you don't have breadcrumbs available. Instead, you might try crushed crackers or unsweetened cereal, panko (Japanese-style breadcrumbs), and even ground nuts such as walnuts or almonds. If you have bread handy, you can even make your own breadcrumbs by first toasting it and then crumbling slices.
try a mix of cornmeal and flour with a pinch of sugar that is how it's done in the south ( well south Texas anyway)
she didn't salt the eggplant to drain the bitterness ?
can u leave the skin on
Yes, it's fine to leave the skin on the eggplant, Rachel Ginsburg. For some cooks it's a visual thing, but the skin also adds texture. Enjoy!
some people think it is bitter but I like the flavor and the extra fiber
you could use your hands, anyway, great dish!!!
So you telling me I have to add cheese for it to taste good?
Hi, ChosenCDA - Cheese is always a choice. We think these fried and crispy eggplant rounds are terrific without adding cheese. Give the recipe a try and tell us what you think.
Never seen eggplant like that before
Peeled and fried?
mspixiedust100 no, i mean, i've never seen eggplant as big as that before
Since when did Parmesan become Parmejhan?
angwon360 But...but that hasn't happened yet yet they pronounce it like a toff
I'll never know why people skin eggplant, potatoes, carrots etc...it has the most nutrition.
Where is the seasoning👀
Girllllll we on the same page
The parmesan is already salty and you don't want to salt eggplant before you cook it, it will either taste bitter or rubbery. That's why you season after you fry it.
Dear Fat Friend salt isn't seasoning... Black people need a whole gang of shit on our food.
Dear Fat Friend but thanks hun
The Realisttt Well, this is just a recipe. We spice it up how we want it ;)
Can this be made without egg?
Salt
Shot out to CURTIS LEE
What should i serve it with besides salad, any other tips? Thank u
If you eat meat, Milka Namia, how about sliced roast chicken?
Milka magnesia, since you'll get sick from eating this.
+Milka Namina Any meat dish is good. This is a good substitute for potato. If a vegan I would serve with a soup.
Awesome recipe..got two eggplants from my garden ..gonna try this 💕
It seems like it's hard to find large seedless eggplant.
You're correct, Luther Reigns. Dark purple eggplant typically has seeds. An alternative is to use the more slender pale purple Japanese eggplant. The slices are smaller, but they don't have seeds and taste just as good.
Seedless isn't natural
Male eggplants have less seeds than female eggplants. Male eggplants have a more dot-like navel, while female eggplants have a more slot-like navel. Chef John from Food Wishes explains in his Baba Ganoush recipe video #dotsnotslots
Yeah! Peeled eggplant! I love eggplant but nobody peels it anymore so I have to make it at home. Eggplant skin is disgusting. Some say it's bitter but I don't think it tastes like anything. It's the texture of it I don't like. And the look of it. Black and slimy and greasy after it's been cooked. I'll try this recipe.
Can i leave the foreskin on?
Very good but, PLEASE, no GMO oils.
why not a straight three stage breading? lightly saltpeppered flour > egg wash > breadcrumbs w/ parm. also, forgo tongs. hands are better with eggwash as long as you keep one wet hand and one dry hand.
If you're such an eggplant frying expert then why did you even watch this video?
1 large numbers egg is enough
WHY SO LONG A VIDEO AND DO NOT USE OIL ???????
no need to peel the skin, and the smaller eggplant the better
Can you use Italian bread crumbs and olive oil to fry? Is olive oil not okay with this recipe? Wouldn't the Italian bread crumbs solve all the comments that the recipe is too bland?
That's a great idea, Diana Dnadmin! Seasoned bread crumbs are always tasty, and olive oil would add flavor. (Disregard information about olive oil not being "safe" to cook with. This is not accurate.)
Allrecipespes Olive oil has a lower burning point than canola or vegetable oil does. For this recipe it's fine, but in a lot of recipes where frying the ingredient is the main point, you don't want to use olive oil, because it will burn. It's better as a light cooking oil or a dressing, not for deep frying or anything requiring a long cooking time at high temps.
Eggplant is actually a fruit
Instead of eggs I'm going to try mashed avacado or coconut oil
It really pissed me off that she used that metal tool and not her hands, like wtttffffffff
Relax. Not your kitchen, you tube video.
Those who think it may be yucky it tastes like fried scallops!
