    When I first tried these fried eggplants, I was hooked! These are so delicious and if you want to go further just dip them with a bit of mayonnaise and fly to the moon. Lisa

    I used flour and egg to do mine in instead of bread and egg I think it makes it a lot tastier then I salt and pepper it turns out really yummy

    You have to salt the slices and put them in a colander and a bowl underneath with a weight on top of the slices. Live them there for about on hour until all the juices, that are bitter to taste, comes out of the slices. Rinse the salt off and pat them dry with a paper towel. Then, and only then, you are ready to cook the eggplant any way you like. I love them fried with an egg wash and bread crumbs. Use little oil in the skillet because the slices will absorb the frying oil. Once fried, put the in a paper towel to remove excess oil.

      So u don't even need alot of oil just a thin layer huh!? I just made a batch n now I'm noticing some aren't as crunchy probably cuz I put too much oil next time I know!!!! Use a very thin layer of oil to fry the egg plant

    Thanks so much! I used Italian bread crumbs and they were awesome. My grandson came in just in time and it almost brought tears to his eyes. He said "Gramma, do you know how long it has been since I had these?" His Great "Poppa Honey" used to fix them for him.

    I salt, rinse, and drain it too. I've tried it both ways and I think it tastes better and has a better texture if it's salted first.

    i have always dripped them in flour first then egg and final step breadcrumbs . it helps to make them not soggy

    To prevent eggplant sopping up your oil, shake it in a bag with cornstarch, then proceed with your recipe.

    These were good. I further seasoned them with garlic powder, dried oregano, and Italian seasoning added to the breadcrumbs. Yum!

    Too bad this gets peeled. The skin has a lots of nutrients (ex: potassium, which helps to lower blood pressure).

    Ive always sprinkled with salt to drain the moisture. Then rinse them and let air dry snd dry any excess moisture.

    Good Lord, forget the canola oil! Fry them in olive oil...way tastier. (Also good idea to salt, sweat, and dry the slices before coating/cooking)

      I use a combo of coconut/peanut oil with some panko in the final breading mix.Awesomness!!!

    Parmesan cheese already salty isnt it? I would add a tiny pinch of sugar. For savoury 90% salt 10% sugar. For dessert 90% sugar 10% salt

    Leave the skin on, use Olive oil instead for frying.. I use gluten free flour and seasoned bread crumbs, drizzle on some marinara for a nice side dish.

    I took the skin off, so there. Also, slice them lengthwise and they don't absorb as much. I butter them afterwards because I'm not afraid of butter

    you should always salt and sweat eggplant 30 min. before cooking, it takes out the bitter taste j/s

      I splash a heavy dose of lemon juice on the slices and store them in the fridge while preparing dinner, Than after i had invented this, I saw it on tv, arrrrrr!

    This is a good base but too plain for me. I slice the eggplant, salt it, rinse it. Let it drain and then coat slices in seasoned flour, then dip in egg wash, then seasoned breadcrumbs with parmesan and bake or fry....soo good

      Some good substitutes for Parmesan cheese, syd claire, are Romano, Asiago, or even a hard Cheddar. Enjoy the eggplant!

      "Stickiness" is what it's all about, Aelahuntress X. You'll have a fair amount of stickiness using just egg whites to hold the bread crumbs onto the eggplant, but using the yolks, as in using whole eggs for dipping the eggplant slices, will hold the crumbs more securely.

      Hi, taineekimi - There are many options if you don't have breadcrumbs available. Instead, you might try crushed crackers or unsweetened cereal, panko (Japanese-style breadcrumbs), and even ground nuts such as walnuts or almonds. If you have bread handy, you can even make your own breadcrumbs by first toasting it and then crumbling slices.

      Yes, it's fine to leave the skin on the eggplant, Rachel Ginsburg. For some cooks it's a visual thing, but the skin also adds texture. Enjoy!

      The parmesan is already salty and you don't want to salt eggplant before you cook it, it will either taste bitter or rubbery. That's why you season after you fry it.

    It seems like it's hard to find large seedless eggplant.

      You're correct, Luther Reigns. Dark purple eggplant typically has seeds. An alternative is to use the more slender pale purple Japanese eggplant. The slices are smaller, but they don't have seeds and taste just as good.

      Male eggplants have less seeds than female eggplants. Male eggplants have a more dot-like navel, while female eggplants have a more slot-like navel. Chef John from Food Wishes explains in his Baba Ganoush recipe video #dotsnotslots

    Yeah! Peeled eggplant! I love eggplant but nobody peels it anymore so I have to make it at home. Eggplant skin is disgusting. Some say it's bitter but I don't think it tastes like anything. It's the texture of it I don't like. And the look of it. Black and slimy and greasy after it's been cooked. I'll try this recipe.

    why not a straight three stage breading? lightly saltpeppered flour > egg wash > breadcrumbs w/ parm. also, forgo tongs. hands are better with eggwash as long as you keep one wet hand and one dry hand.

    Can you use Italian bread crumbs and olive oil to fry? Is olive oil not okay with this recipe? Wouldn't the Italian bread crumbs solve all the comments that the recipe is too bland?

      That's a great idea, Diana Dnadmin! Seasoned bread crumbs are always tasty, and olive oil would add flavor. (Disregard information about olive oil not being "safe" to cook with. This is not accurate.)

      Allrecipespes Olive oil has a lower burning point than canola or vegetable oil does. For this recipe it's fine, but in a lot of recipes where frying the ingredient is the main point, you don't want to use olive oil, because it will burn. It's better as a light cooking oil or a dressing, not for deep frying or anything requiring a long cooking time at high temps.
