    Thank you for this. I love fried eggplant, and am going to have to try the cornmeal breading, rather than bread crumbs. Sounds so good that way. Was I hearing a smoke alarm battery replacement alert? I watched another RUclips video with the same alert, but it was louder, leading me to think it was in my house. lol

    I just watched a RUclips video about fried eggplant. All I gotta say is quit apologizing.. did you do your best if the answer is yes you had no reason to apologize. Part of you doing RUclips videos and us watching you grow into a better RUclips video producer is just how this works. The other thing don’t pay attention to anybody that’s gonna throw you.. I know people say if you can’t say something nice don’t say anything at all, we’ll hear something easier. If what they say don’t sound nice don’t listen lol.👍

      @Ana Eggplant and zucchini are good, and usually really cheap.
      You might not like them though, my wife refuses to eat either so I don't get to make it often.

    You removed the skin!!!! Bro, eggplants may be healty but not only are you frying it but you are removing the healthiest part which is the skin, full of fiber and vitamins. Not much "healthy" left after that

      You’re correct nutritionally concerning the skin. However, with vegetables like that, and Zucchini, the breading doesn’t adhere to the skin as it does to the meat. Hence some people peel.

      @@philanderphillips2309 Thank you for bringing this to my attention. But here is where your point is rendered invalid. When making this dish, one does not take the whole eggplant, dip it in bread crumbs and then fry it. No, the eggplant is SLICED into slices about 1/4" thick which reveals the inside of the eggplant or in other words the "sticky part" to which the bread crumbs can stick. Only a very thin part all around each slice will have skin and when I do the math. If a 1/4" slice with a diameter of 3" gives 16.49 square inches. That means the area with the skin equals to 2.35 square inches and is the equivalent to 14.25% of the total area of that slice. That means that over 85% of that slice will be covered in bread crumbs. I do not see the reason nor the need to remove the skin so that you can have just a little more bread crumbs stick to your slice and spoil something that is already perfect for consumption.
