We skin the eggplant, dip in egg wash then Progresso Italian bread crumbs. Brown in veg oil. Put on a paper towel on a plate to get off excess oil. Line a baking dish with your favorite spaghetti sauce. Put down one layer of the egg plant. Put a piece or sprinkle shredded mozzarella cheese over each slice. A little more spaghetti sauce. Make a few layers Cook 350 for aprox 20 mins MMmmm So good. I don't see how people leave any part of the skin on. It's very "chewy" no matter how long you cook it. Enjoy!!
I usually do it much as you described. I usually let the sliced eggplant sit a while, lightly salted. It draws out some of the moisture. You can see it collect under a colander. I make a marinara and ladle as desired. I have NEVER been able to cook the skin in such a way that it did not taste and feel like eating a strip of plastic. I do not understand how people enjoy eating it.
About to do this right now minus the sauce then put it in pita bread with some hummus

I should have watched this vid before I started cooking! My first batch came out saturated w/oil, but was still yummy. My second batch was after I watched the vid & was much better! Less oily & was firmer & scrumptious! Thank you for the tips!

Thank you so much for sharing this!! I am trying it now. Instead of flax seed, I use raw Malt O Meal or Cream of Wheat because flax seed mocks hormone and that plays havoc with my body. It's really great instead of bread crumbs and it makes things really crunchy. But it's not gluten free.

Recently, I have been exploiting eggplant's tendency to soak up oils by putting a generous amount of olive oil and butter in the pan then low frying onion, red pepper, and a little bit of garlic.
scoop out that when the onion is taking on a bit of colour, and then frying the eggplant in the seasoned butter/oil emulsion.
Takes a little bit longer but in my opinion... worth it.

if you would of scattered salt over the sliced pieces let stand for 10 min then rince all the bitterness would be gone about 1 tsp is lpenty for adverage eggplant

It's not been necessary to salt eggplants to remove the bitterness for about a decade because the bitterness was bred out of them.
Maybe do it for big old ones,
Looking forward to trying this. I was given home grown egg plant last week and my previous attempt to cook it was a disaster, so I hope with this tutorial I will be be able to cook it better. Will try it with the flax seed as well. Thanks for sharing

In season we ate fried eggplants with garlic every midday meal. Very inexpensive in the 50s.

@@spikenardmz3355 that's because it's not made for frying fat so. It's an excellent pan for what she is making, plus it looks very good for doing pancakes. You wanna be a fat ass go get it daddy deep fryer.

A helpful tip is to purchase "male" eggplants - round indentation at bottom - they are less bitter.
That's great, wouldn't it be better to add the salt after you've dabbed the eggplant disks with olive oil? I think the salt is essential for that needed taste. Thank You for posting.
The salt is not for flavor. You salt the eggplant prior to cooking and let it sit for about 45 minutes to draw out the bitterness. Then rinse the salt off the eggplant before frying. Also a vegetable oil is usually used instead of olive oil because the vegetable oil can stand a higher temperature before smoking.
Does she mean GROUND flax seed? As a “chef” that’s pretty crazy she didn’t distinguish that
Toss the eggplant slices in a plastic bag with cornstarch first, then batter and deep fry. The cornstarch prevents the eggplant from getting soggy with your expensive olive oil.

Your supposed to put salt on them and leave on the table for 30 mins all the bad juices will come out, wash them and then season them how you want.
