Made this yesterday and had them for dinner and cold for lunch today. Both were amazing! I made the enchilada sauce and refried beans from scratch and then followed this for the tamales. Everyone loved them! Thanks for the recipe. 💕❤️

OMG... I made these tonight and they are the absolute the best!!! I did add a little fresh garlic and oil before adding the veggies. I did also warm the refried beans and added a little veggie butter and seasons like dried cilantro and a bit of Italian seasoning so it was easier to blend everything with the beans already warm. Tin foil!!!! I did it the other day first time took me hours. 3 hours waiting for the corn husks to get soft was the longest part. Will do tin foil right now!!!!
had literally no ingredients but these looked SO good i had to make them so i made enchilada sauce, masa flour, and refried beans all from scratch (WHEW) and now theyre steaming! UPDATE: they came out SOO good! thanks a lot for this recipe i love it

These are pretty good but im here in New Mexico and we use jack fruit with homemade red chili. First we pressure cook the jack fruit and vegan chicken stock mix with some home made red chili and we use that same broth to add back into the masa. And we use vegetable broth mixed with our homemade red chili for an oil free masa it works and adds flavor and looks just like shredded pork tamales.

Authentic or not doesn’t really matter, the down side of it is using the aluminum foil...I thought being vegan was more about being eco friendly and eating healthier.
Salt is not bad for everyone. I actually need extra salt because I have low blood pressure (doctor ordered) but everyone can adjust there own salt per recipe. I make my new recipes much lower in salt and healthier

Hi Veggie Rose! We are learning aluminum is TOXIC. That's why it's a good idea to use corn husks or parchment paper.
That's what I was thinking too. If the corn husks are too difficult to use, I"d just use parchment paper. Why use foil in the first place?

I made some tamales very similar to these but used silicone muffin cups instead of the foil. They came out great!

what's the difference between masa and corn meal or flour?
The corn flour for Masa is soaked in some sort of alkaline solution which is what gives it, it's distinct Masa taste.

Yikes! Aluminum foil is highly toxic when heated! Not a good option unless you want a toxic dose of aluminum with your tamales!
