  • Melonpan are Japanese sweet buns covered with a thin layer of cookie dough. They take many steps to make but freshly-baked Melonpan are scrumptious!

    140g Bread Flour (4.94 oz)
    25g Johakuto or Powdered Sugar (0.882 oz)
    1/3 tsp Salt
    5g Non-Fat Dry Milk Powder (0.176 oz)
    3g Instant Yeast (0.106 oz) - a little less than 1 tsp
    1 tbsp Beaten Egg
    70ml Warm Water (2.37 fl oz)
    15g Butter (0.529 oz)
    Bread Flour for dusting
    - Cookie Dough -
    25g Unsalted Butter (0.882 oz)
    35g Johakuto or Powdered Sugar (1.23 oz)
    25g Beaten Egg (0.882 oz)
    80g Cake/Pastry Flour (2.82 oz)
    1/4 tsp Baking Powder
    Granulated Sugar for glazing
    Bread Flour for dusting

    I remember having my first bite of melonpan and it was instant HEAVEN. Not too sweet, not too plain. Cookie on the outside, super soft on the inside. UGH. Just, PERFECT. Lololol, kk, enough drooling from me. I'm totally gonna make this now.

      +KayIsDaName1 I feel the same! I only tried it on my last night in Japan nooooooo wish I'd tried it the first day and brought some back with me! This video recipe sure looks decadent and delicious and just like the one I had from Family Mart! YUM :)~

      +KayIsDaName1 melonpan is one of the first things i wanted to try in japan. I found a little beakery close to hiro-o flexstayinn (really good appart-hotel btw).
      i tasted melon pan first day.... come back to buy some evry days after that.

    Geez, some people can be so mean. if these smarty pants really did their research like they are asking people to do, they'd know that there are actually melon-flavored melonpan recipes out there. yes, traditional melon bread is made without melon and are called melonpan because of the shape. but since then a lot of bakers and regular people (Japanese & non-Japanese alike) started to think, why not make melon-flavored melonpan? So they did. In Japan you'll find a lot of shops selling melon-flavored melonpan, in fact melonpans come in other flavors as well. Other versions even have fillings.
    FYI: Foreigners have not been the only ones asking why melonpan doesn't have melon in it, this is an age-old rhetorical question in Japan as well. Which was probably what prompted bakers to invent melon-flavored melonpan.

    I had a chestnut Melon pan from a corner shop in Tokyo and it was the best bread I've ever had in my entire life. It was so amazing that i had to come here to look it up. I am Mexican and this may look like the classic concha but the taste and texture is completely different.

      I went to Japan and didn't eat a lot of melonpan until the end of the trip, because stupid me, I thought it would taste like melon. By the time I tried this delicatessen, I had little time left there. I've done this a few times now because I didn't eat enough melonpan when I was in Japan. A mistake to be corrected next time.

    I converted the recipe to imperial units here. It's a little weird sounding, but this is the closest I've been able to compare them (converting Oz. to tablespoons/teaspoons)
    Hope this helps some of you bakers out there
    Bread
    Flour - 10 tablespoons
    Sugar - 2 tablespoons
    Salt - 1/3 teaspoon
    Dry Milk - 1 and 1/2 teaspoon
    Yeast - 1/2 and 1/3 teaspoon
    Beaten egg - 1 tablespoon
    Warm Water - 5 tablespoons
    Butter (soft) - 3 teaspoons
    Cookie
    Butter (soft) - 2 tablespoons
    Sugar - 2 and 1/2 tablespoons
    Beaten egg - 2 tablespoons
    Cake flour (2 parts flour 1 part corn starch) - 5.6 tablespoons

      Alan Garcia I agree. Professional bakers use scales for ingredients due to humidity and environmental attributes that will affect the amount of space it covers.

    We made this recipe today and it was absolutely perfect! I was hesitant to try such a seemingly complex recipe but it was easier than I thought and came out looking and tasting exactly like the Melon Pan you can get at bakeries! So impressive! Thank you Cooking with Dog!
    Also on a side note, i didnt use cake flour for the cookie, just all purpose and it came out great.

    I have to say, I've been watching this channel for a few days now and I thought at first that the dog was weird and possibly unsanitary right by the food you're cooking. But, every time I look up a Japanese recipe to try making, you guys pop up, I cook what you're making and how you make it and it's ALWAYS delicious!!       It's kind of the cleanliness and kind of not, more like if I were a dog is be pissed that my owners are making food in front of me that I can't eat and as a dog owner, I'd be pretty annoyed that my dog is begging in my face while I'm cooking haha!! But really, they are brave people and Francis is a brave pup for them being able to do this channel so well!! Yeah poodles are much cleaner than most dogs, my westie would be quite clean too but he has a skin infection and I'm always finding his hairs he scratches off himself in my food so at first glance to me "Cooking With Dog" sounds like a hygienic nightmare! But really, Francis isn't than close to the food and the recipes are always so delious, I really don't mind the channel one bit and none of the dog factor phases me anymore!!

    I am Taiwanese living in the Netherlands. I love the melon pan (Taiwanese version is called pineapple pan). I’ve tried different recipes, but your recipe and video are perfect! It tastes exactly the same as those I had in Tokyo, and it is not too sweet. I’ve made this so many times, and it always makes me so happy and reminds me of my childhood. Thank you so much for this recipe!
    ps I made your ramen in 2009 when I was living in Germany. I am a loyal fan ever since. I am sorry that Francis passed! Thank you for all the videos and the upcoming new videos.

    This recipe is amazing! I've made other melon pan recipes in the past, but this one comes out perfect: crunchy cookie outer shell with fluffy bread inside. The recipe does take quite a bit of time, but making the melon pan itself is not difficult. Instead of keeping them all plain, I flavored 2 of the bread as matcha and 2 as chocolate, and it was delicious. Thank you, Cooking with Dog, for this lovely recipe!

    A few years ago I made those the first time and frankly, they haven't turned out great, because I kept adding flour. But people improve, so I revisited the recipe. They are wonderful! So thank you for the recipe and all the love you put in your videos. I still enjoy them to this day ^~^

      Lps Blue Diamond actually, you should do some research. Traditional melonpan does not have any melon in it. It’s simply called melonpan because it looks like a melon (google pictures of melon and you’ll see that the outside of a melon, not a watermelon, has crisscrossings on it). However, people have started adding flavorings towards melonpan but this video is about the traditional melonpan, not the flavored version.

    I just made two batches of this it took about 7 hours but I was also making some cookies. I replaced the dry milk powder for 3 caps filled of whole milk. Thank you sooo much for posting this. I haven't been able to find any melon pan at the grocery stores near me. All of the asian grocers are Vietnamese and Chinese. ^-^ I've always wanted to try. I love your recipes.       This is an extremely unhelpful answer, but I have absolutely no memory of buying the milk powder. All I remember is that it was able to be found in the normal grocery store, in a good-sized bag. I used normal pillsbury bread flour, and my estimate of gluten is A LOT.

      Maoh never put yeast dough in microwave, you need not even put it in an oven, just keep it warm like a baby ;-)

      It is an oven (they have small ones in japan because of space issues) also I use my microwave (turned off) as a place for my dough to rise because it is warm and draft free.

      +naseerahvj The microwave is excellent for keeping a dog or cat from harassing the dough while it rises. I often use the microwave to store food that needs to rest at or near room temp as well. The insulated box that needs a thumb to open is a great place to keep yeast warm like a baby.

    my personal experince: i had a very bad start. I was making the cookie dough but then i suddenly realised i added 140g flour and not 80, so i had to start over. second time i made the cookie dough was a success. the bread dough also went fine, but when i added the butter it got sooooooo sticky, but i was patient and actually ended up with a non sticky dough after about 10 minutes of kneading.
    i also had another problem, we don't have instant dry yeast in my country so i ended up using normal, i used about 10g. and in the beginning the dough didn't look like it has fermented so much, it was not that big, and when i made the melonpan they were very small, like mini but after those 40 minutes of fermenting and 12 minutes of baking they ended up being a lot bigger :).
    Overall it went well, but it's very time consuming compared to how much you are getting out of it. It's not just a snack you can make in minutes, it requires patience. But it's a great taste, a little crispy and sweet on the outside while slightly buttery and soft from the inside yum!

    I had Melonpan during my visit in California. My sister bought me one from a bakery in the Japanese District. It tastes just like a donut. I loved it!

    In my country those are called 'conchas' (shells). And no, they are not made with shells of any kind.

      No conchas are made different. It's not cookie dough. Conchas have sugar mixed with other stuff in it. And conchas have a more doughy and soft texture.

      And in Hong Kong, they’re called pineapple buns even though there’s no pineapple in it! The first time I went into a bakery in Mexico, I was so surprised to see conchas! Made me wonder who invented it first... although it really doesn’t matter as I find all three versions to be delicious. :)

      KigurumiRinRin Perhaps..but only do so it small amounts (tsp at a time). Different flours (even of the same type) absorb water differently, so judge how much you need by feeling the texture of the dough :)

    why are people thinking these take ages. it's like 10-15 minutes max for the first bit and maybe another 10 for the other. you don't have to sit there waiting while they rises so that is time spent doing what ever else.

    I've just tried this recipe and it is EASY , as long as u get all the ingredients right.
    I forgot to put in the milk powder when I was kneading the dough, so I added it after it was fermeted. It tastes sooo good, just like the ones I have eaten in Japan😍It is a must try if u love melon pan
