But they are also loaded with chili pepper so no additional chili is needed. I learned the advantage of cooking the meat and vegetables first and then frying the potatoes separately - not something I did before but will do from now on.

Wow! I’m so very late, and I loved this guy. I’ve cooked several of his dishes and amazed family and friends. Especially that blooming onion. It was only about a week ago that I learned that he was a country singer, puppeteer and all those things he did with Red, and owning his first Harley. I I was so happy knowing that he has such a rich full life. My deepest and most genuine condolences.

I've been a truck driver for close to 30 yrs. The Shady Lawn Truck Stop in Ardmore Tennessee used to have a breakfast dish like this on their breakfast menu. I would always order this for breakfast when I stopped there. This is one of my favorite truck stop & The Tennessean Truck Stop in Cornersville Tn. Sheila & Jennifer, I really miss Steve & his recipes. Steve was a 1st class act!!! Ya'll are doing a great job carrying on Steve's cooking enjoyment. Hey Hey Girls...A little update here..... Well... Susan and I made this outstanding dish yesterday and it was GREAT!! I used the bacon grease instead of the olive oil. I also browned the meat in it. Then I did the onions until translucent added the minced garlic....then added the green beans to heat thru. Put them in the same bowl with the meat and then cooked the spuds. I added the salt, pepper, pepper flakes and 2 teaspoons of Knorrs powdered chicken bouillon. Boewned them up and then added the bowl of meat and onions. Man...that was a REAL taste TREAT for sure. Thank you two for this recipe. I just looked at you breakfast Casserole and we're going to have to do that one real soon too!! Thanks again and stay safe. Gary

This recipe is really good fried in a cast iron skillet. Yummy! I always thought that this was a Native American dish. Duh. Then I learned that everybody eats this great dish!

When i do mine potatoes and onions put in the cast iron put olive oil cut onions,green bell peppers and cut up tomatoes seasoned and sausage put it in the over heat it 350 degree .
My mom has made this sans green beans since I was a kid. Still ask her to make it for me time to time. While I love to cook and am good at it, I could never get the potatoes like hers. She also would add tri color mini pepper for sweetness too and then top with cheese before serving. Great recipe

Love this channel but that's Idahoan or even northwestern more than southern. Depending where you or one of your relatives work in Idaho, you should rarely ever pay for a potato... so if you grew up in Idaho or the northwest, you were raised on that... sometimes with hamburger, hotdogs, sausages... you name it. Love the south and the food. (Drove truck a few years and love everything about the south) but Idaho invented that 😂

I will replace the beans with Green Chili's. Green Beans have to much Vit. K for me.
I make it with hamburger, top with a couple fried or poached eggs, serve with salsa and green beans as a side.
