From my experience, drawing wings is a very useful skill to any artist, for drawing gryphons, birds of all kinds, angels, pegasi etc. It would be helpful if you explained the wing shape, what lines form it to make the right impression, the dynamics, the exaggeration, an easy way to sketch it fast. Sure you could say "practice and anatomy" but... you do make tutorials for beginners, don't you. It would be interesting ;)

So with using a reference for pen and ink- is it a good ideal to make a copy of what is being used for the bird in greyscale/ black & white to better see because the pen is black? Or does it really matter?
Either way is fine but it depends on the range of values. In black and white it is easier for you to see the values and focus on main value relationships. However, color is sometimes useful because it allows you to see subtle differences
Alphonso Dunn thanks for replying. So having both would be better? I did have a Hawk I’m working on and I have it in color and then I did a black and white copy. Also is it best to not over detail the wing? Or what about areas of large shading? How best to do that in pen?
Yes it is best to keep both. As I mentioned, the colored photograph can help to distinguish subtle value differences but because because it can also overwhelm you. For large areas use really close hatchmarks so they dont disrupt the texture of the feathers but are read as shadows

I pretty much draw like a child but I still enjoy learning things especially this because ive been drawing a lot of birds lately
