I can make a gourmet dish for under $5 or $X’ but in reality, those channels don’t tell you that the AMOUNT of ingredients they use cost what they claim. In reality, the ingredients these YT channels have in their fridge probably cost them $60 at the grocery store, and the single serving dish they make equates to the under $X that they claim.

If your stock is empty, you need pasta, sauce, cheese, butter or oil- and that’s just a simple pasta dish that would put you at $15, and that will only be for 3-4 servings. These more gourmet pasta dishes that use onions, garlic, herbs, spices, meats, runs you up another $20 at the minimum. I’m stating that the amount of ingredients used for a single serving equates to these sub $10 prices that the channels claim. But in reality, your shopping cart is going to include all servings and ingredients. Heck, that celery was $3.99 and a serving only needs a stalk.
I get you point tho, you just made it sound like it’s wildly expensive to make a meal, when really it’s fast food that is actually expensive, 1-2$ taco sounds cheap at first but then you realize how many tacos you can make by buying the ingredients from the grocery store and how little it would cost you. I'm an Italian/French cook myself and this is a pretty nice looking recipe ! I personally would start with the carrots though, celery and onion at the same time as they take less time to cook. That being said, I'm not sure about BABY carrots like they used. Some fresh Thyme while creating the mirepoix would be a nice addition Pinçage with cream? Seems pretty tasty. Don't eat beef but seems like a good combo

1) dice the veggies smaller and cook them until they become sticky but not brown. 2) Brown the meat (you stopped at grey), and proably want it a finer texture too. Break the meat up when it's still red, much easier. 3) sauce like this really needs time to reduce. It was super watery and loose. 4) good job saucing the pasta. Adding a little bit of the pasta water will help thicken the sauce and help it cling to your pasta. Everything was here. But I think you could change certain things and really improve the dish.
Jokes aside, I'm genuinely saving this to use for a future meal. This was so simple to follow along with and I'd like to give it a shot as someone trying to get into cooking for myself.

I'm not sure if you've seen them but in those videos, the chef would buy a bunch of ingredients that easily surpasses $10 or they'd coincidentally have wagyu beef at home to cook with. Then once they'd finish cooking, they'd claim they spent below $10 even though it's per serving, not the total ingredient cost.

Real talk, that’s what I hate about these cooking channels. “THIS MEAL ONLY COSTS $2.50 (per serving)” meanwhile the ingredients cost $30-40 for everything, sometimes more. It’s like these “chefs” don’t understand that we’re looking for cheap meals for an overall price, not looking to spend a ridiculous amount on one meal.

The guy who typically does these videos isn’t really trying to say only $10 can make something gourmet. It’s usually just trying to incorporate an extremely cheap ingredient into a gourmet dish. Like “turning a $10 dollar steak into a gourmet meal” never implies that the spending cap is $10.
