Ashleigh...quick warning...if you have a glass topped electric stove...and it looks like you do...please be sure to NOT use it like you would a counter...it is not a solid surface and can break if you put too much pressure on it. When you were smashing those Ritz crackers, I was fully terrified for you...trust me when I say, even though it is replaceable, you do NOT want the hassle of shattering all or part of your glass stove top. 😮💯

And she was using a stoneware baking dish. Those things are heavy! Wouldn't want to accidentally drop that down on to the glass stove top.
Yup...exactly...it is not worth the risk...you just cannot treat a glass top electric stove the same way you treat an older stove with metal construction. 💯

Oh Ashleigh, I’m a gonna need you to throw out that margarine and go buy actual butter. Ingredients should be Sweet Cream and Salt. NOTHING else 😀now go make toast and put butter on it. We in West Virginia make this and a version with diced potatoes that we call either Funeral Potatoes or cheesy potatoes..... Bacon on top is good too. I always mix in a half a stick of butter then I don't even have to worry about greasing the pan. Much Appalachian love!

I don't think you were getting on your moms nerves for a moment. Time spent with family in the kitchen, etc will always be a precious memory. I make a similar cassarole, but I use red and green peppers, ham, and the hash brown patties...uhmm uhmm good. Never had the Ritz crust before - may have to try it.

(edit to last comment) Ashleigh i have to share this fun cook book I found. it's called Ruby Ann's Dpwn Home Trailer Park Cookbook: by Ruby Ann Boxcar" it's a fun southern recipe cookbook filled with humour, stories about the trailer neighbors and their recipes. My grandmother was from the south and she use to have this awesome meatloaf recipe she'd make. I never got the recipe from her but after trying the recipe in this cookbook it was like grandma's southern cooking! i've tried several of the recipes, one of my favorite snacks is the one called Spam Rackers. There are so many recipes including alcoholic drinks. This woman made other cookbooks including one for Barbecues and holidays. I strongly recommend trying some of these recipes plus the book is a nice conversation starter with friends and neighbors over a morning cup of coffee if they just happen to see it.

I just had these potatoes for the first time when I visited family in GA in July and then again when I visited my bestie in IL later that month. I'VE BEEN MISSING OUT ON THESE MY WHOLE LIFE! Corn flakes or Lay's potato chips on top, now I want to try with Ritz.

Fun little fact: for a while, butter substitutes such as margarine were illegal to sell in the state of Wisconsin so people who wanted it had to go on so called "Oelo Runs" across state lines to purchase the product and smuggle it back home.
In fact, a section of Wisconsin law under the heading “oleomargarine regulations” still states to this day that, “The serving of colored oleomargarine or margarine at a public eating place as a substitute for table butter is prohibited unless it is ordered by the customer.”
Plus, real butter is just better.

I make a "Pizza Meatloaf" ya'll could try, fore warning recommended only eat 1 piece at a time as it's heavy and also known as "Heart Attack loaf" in my house. It came about because I love pizza and realized my favorite part of pizza is the toppings so I made them into a meatloaf using Ground up garlic and cheese croutons as the bread crumbs alongside the Eggs, Shredded up pepperoni, Beef, mild seasoned Sausage, Real Bacon Bits, Diced red and green bell peppers, Onions, Mozzarella, cheddar or fancy blend cheese, parmesan and all mixed up with about 2 jars or so of Pizza sauce topped with a few whole pepperonis and whatever preferred cheese. I have been known to make it in a "tire" or bunt cake shape on top a round pizza pan with holes and place that pan over a "catch" pan for ALL the grease that will come out. Again its pizza loaf aka heart attack loaf so I only make it about once or twice a year.
I knew that butter and margarine were different things when I was little. Of course, back then we had Parkay commercials...
When u did the clapboard with your hands it reminded me WHY movies use them the Clap or Clack of the board is so loud that it pegs the audio in each camera. this is easy to see when looking at the video in the editing software (if u are also showing the audio waveform). Makes it real simple to sync
