  • This 2 ingredient flaxseed bread is great if you're looking for a flourless, nut free, lecithin free, gluten free, bread. It tastes like Vogel's bread which a more healthier option than regular bread, but still, it's not keto friendly, so I was pleased to discover the taste. I'm loving the macros on for one sandwich too!

      I definitely will try it again and use some baking powder. It’s too dense, and doesn’t rise in a regular loaf pan and too moist - even toasting it still comes out too moist.

    This looks very like the German or Russian black bread. That’s usually made with rye but it’s heavy and substantial. I can imagine this being similar. I bet it’s absolutely fabulous toasted. I’m sure I’d love it but you need to drink plenty water when eating flax seed. It absorbs a lot of moisture, which is quite good because you’re going to feel fuller on less bread. Good one Mel xxxx

      Yes you're right on all points there Lyndsey. It reminds me of the same...Rye/German/Russian.

    Hi Mel, just a message to tell you that I have become a fan of your flax and egg white bread, so simple and so healthy! It is absolutely incredible with just these 2 ingredients! I grind (with a coffee grinder) 250g of flax seeds to which I add 8 egg whites (or 7 whites and a whole one) and fresh rosemary from my garden with a little salt. I put the dough in a cake pan, put it in the oven for 30 to 35 minutes and it's ready! I eat it with cheese, butter or cold meats and it's great! In the toaster, it's also perfect and I keep it in parchment paper for a week without worry. THANK YOU a thousand times, once again! You are really the best!🥰

      @mylor16000 Год назад +1

      @@candycandy4639 Hello Candy, I have a fan (or convection) oven for my part but I think it doesn't matter what oven you use because I've noticed that the baking time can vary considerably without affecting the bread. I sometimes leave it in the oven more or less long, the bread does not burn and it is always perfect! However, it is necessary to take it out of the cake mould and the parchment paper after baking so that the underside does not get wet and to wrap it in a new parchment paper to keep it well for a week. (An extraordinary advantage of this bread if you have a ketogenic diet is to greatly improve the intestinal transit thanks to its fibers!). :-)

    Thank you so much for this recipe. I often cant afford almond flour and this is so much cheaper. I just made this bread and it's perfect. It tastes like a dense rye bread. I think you could adjust it to taste by adding seeds or herbs and spices.

    Hello again from Alberta Canada.
    Just found this
    I hope you like it
    Keto Blueberries jam
    * ▢

2 cups / 300g blueberries, frozen or fresh
    * ▢

2 tablespoon water
    * ▢

juice of ½ lemon
    * ▢

2 pinches xanthan gum
    * ▢

optional: 1 teaspoon vanilla extract
    * Put the blueberries, water and lemon juice (and vanilla, if using) in a non stick pan, cover and bring to a boil.
    * Remove the lid and cook on a medium heat for ca 15 minutes, stirring regularly. The mixture will reduce by ⅓ and thicken. Smash the berries with a spoon while they cook.
    * You can blend the mixture if you wish to have a smooth consistency. I like it the way it is, with a few bits and pieces in it.
    * At the end, take a couple of pinches xanthan gum and sprinkle it evenly into the pot, stirring well afterwards. Xanthan gum is a brilliant thickening agent and is also used in gluten free baking, so it does come in handy. You only need a tiny amount - it's quite remarkable.
    * Pour the mixture into a clean jar and store in the fridge. This recipe fills a small (200ml) jar.
    A this mixture makes 200g jam, I calculated 1 portion=14g=1tbsp.
    Recipe Tip - How sweet your jam is will depend on the natural sweetness of your blueberries. If you find the jam is not sweet enough, feel free to add a teaspoon or two of powdered erythritol or 4-8 drops of stevia glycerite
    Take care

    I made this today: using egg whites from a carton so I used 1 cup of egg whites might be too much because mine was more like a batter and not like a dough ball like you had. So…mine was lighter in color than yours and collapsed a bit during the cooling.
    I also added a scoop of nutritional yeast and a scoop of raw sunflower seeds.
    It tastes good for what it is - not eggy at all. I toasted it, put a fair amount of softened butter and sugar free (with xylitol) blueberry jam on it and it was a great keto snack with a cup of coffee.
    No response on my continuous blood glucose monitor.
    I’ll make it again - and yes I bought that tiny pullman pan which is cool. Thanks for sharing the recipe!

    When I was on Keto diet, I made a lot of flaxseed bread. Flaxseed has low or almost zero oxalate, however it has a cyanide compound that only allows human to consume 2 tbsp at most per day. Oxalate affects my thyroid and kidneys. I move over to carnivore. Check your thyroid. Particularly active T3, don’t let your doctor just order TSH level and also check your kidneys for kidney stones. I have my abdomen ultrasound yearly and blood lab works every three months, that is how I know. 😊

    Hi Mel,
    I'm new to your channel and I must say I find your presentation style utterly charming and refreshing! 🙂. I have a question please: I'm new to using Flaxseed flour, and recently tried a flaxseed bread recipe that included flaxseed flour, psyllium husk powder, baking soda, salt and water. While the end result tasted fine, the bread left an unpleasant "slippery" or "slimy" feeling on my tongue. I'm really hoping this isn't from the flaxseed flour and am assuming it was from the psyllium husk powder, but just wanted to verify with you that your bread doesn't leave this same feeling on the tongue before I make it? Thanks so much and I just subscribed and look forward to trying your keto/low-carb recipes to help manage my Type 2 diabetes without medications. Take care! 😉

      It's lovely to meet you. Thanks for joining the community. We have a live show every week and a Facebook chat group where people share photos and their review on my recipes. Let me know if you want to join.
      Okay I have to be honest with you. When you add both psyllium and flaxseed meal it does need to be balanced because if you soak the 2 above ingredients in water they both turn to jelly. It's hard for me to gauge whether you will find this bread slimy. I actually loved it. Tastes like a German or specialty bread to me.
      I would say give it a try, given that it's so easy to make and doesn't need much ingredients. And yes please let me know what you think of it because then I would need to ask do you need Gluten free, do you prefer brown bread, stuff like that will help me suggest one you might like better. ❤️❤️❤️

    I made this flax seed bread today. As a bread, whilst making it, kept thinking, I'll give it a go. To my surprise it is a full flavour bread. Have to admit that I tweaked the recipe by adding, 1 tlb Oil, 30g Oat flour, 1tsp of B.Powder and 1/2tsp B.Soda. it really is a lovely tasting bread. My only comment is that it sunk in the middle, had no rise at all throughout baking. This is surprising, as baking powder and the bicarbonate of soda would have, should have, given it rise, but even without these two RUclips videos show rise in just flaxseed and egg whites. Oh, I whisked the egg whites to nearly stiff and then folded in the dry, adding the oil after. Don't know why there was no rise, as leaving the flax seed aside all the other ingredients I use in banana or carrot bread same quantities and always get a super rise in those loaves, so can't think what occurred to prevent the rise.

    • @CookwithMel1
      @CookwithMel1  Год назад +3

      Hello, I'm so happy you like the taste of the bread. You added alot of extra ingredients and well done for putting your own spin on it. Keeping in mind this bread rises with these two ingredients here are my thoughts. While oil moistens the bread it is a 'heavy' ingredient, and you really don't need the oat fiber in this recipe. Oat fiber is amazing in that it acts as a flour in keto baking and it's very absorbent (it could have dried out the egg whites completely). I would use the flaxseed, the egg whites, baking powder, and perhaps grated carrot.

    OK so I made this twice and it didn’t turn out the way that you did it but it turned out fluffy, but when I was mixing it with the mixer. It didn’t turn out the way that she did it so I’m not sure what I did wrong. I don’t know how many minutes I have to do it for to mix it but even though I did the two ingredients I think I did it wrong. Are used ground flaxseed from Walmart. I’m not sure which flaxseed I need, but it’s the only one I have. I tried it with the egg yolk in it, and without the egg yolk. There was another recipe you did, which turned out amazing but this one it’s OK I mean I don’t hate it. I just wish it turned out like yours.

      Yes you can adjust the recipe down to as little as using one egg (just divide the ingredients by the amount of eggs you wish to use)
      Temperature would be the same it's the bake time that's the variable. Half the recipe, check at half the bake time. You might need a few extra minutes to brown the top
