165* is the safe temp not 185.good job tho. ive used my copper chef same way and with cornish gamehens great result..i hope you also strain and use the stock for other things! i always have a couple qts frozen ready to make chicken noodle soup
Another winner, Kathy! I love my copper chef pans too. I just got the XL casserole copper chef pan about a week ago and absolutely love it. Love Eric's recipes too!
Your version looks simpler than the recipe in the little booklet that came with my Copper Chef pan: no stovetop browning of the chicken or initial sauteeing of the veggies before putting everything in the oven, and no onions or celery. I like it, actually! I might start the chicken breast-side down and then turn it over for even browning if I were doing it this way, but other than that I wouldn't change anything. I'll have to try your simplified method the next time I make Copper Chef roast chicken!
Oh I've never seen the Perdue Roasters already seasoned in our stores, maybe I'll ask about them. My husband wanted a copper chef pan so bad, but then he read some bad reviews and said forget it, maybe I should have him watch your video's. Thanks for sharing, your dinner looked divine.
I hadnt used the roasters until very recently when the store was sold out of regular chickens. After we tasted them and found how they are so easy to make, we started using them. Also, the Copper Chef has had great results every time I used it. Very easy to work with. Thanks for watching and commenting!!!
Hi Kathy! Great video..I am getting copper chef pans for Christmas...so you have no complaints? I’ve read some bad reviews...hope I love them. Ps I subscribed to ur channel!
Thanks, I got a lot of ideas from your channel for using the Copper Chef, so thanks for that! I'll be doing a summary of my favorite channels in the next week or so, and I will have your channel on my list.
Thanks! I highly recommend getting the XL size, as it seems you love to cook also! I've been doing quite a bit in this size, but my new XL arrived today. I can see there will be lots more things I can make in that size.
my sister got me a copper chef pan last week and use it almost every day i could see the roasted chicken with rice pilaf and green beans will be trying a roasted chicken in the pan maybe baking bread in it too
I'm glad your sister got one for you. That's how I was the week I got it. I couldn't stop trying it out. Starting with a simple grilled cheese sandwich. lol. Enjoy experimenting with it, it's an awesome pan!
That looks so beautifully browned! I've been using my bundt pan as a vertical roaster for chicken, but I think I'll try using my new Copper Chef pan instead the next time I roast a chicken. Is the recipe in the little cookbook which comes with the Copper Chef pan?
that is a beautiful chicken! i havent seen the ready to roast ones either....but I will be asking. thanks for the vid.. you make great foods and so fun too. more items for the wish list , haha
Maybe the chicken wasn't as moist. But it wouldn't hurt to add some chicken broth to the carrots and potatoes or keep it more towards the middle of the oven to reduce chances of burning. Thanks for trying the recipe.
Well, I've had this pan for several weeks. I have really been giving it a test by cooking in it nearly every day. I have had great results every time I used it. Thanks for watching!

Looks wonderful! It must be the pre seasoned chicken. I don’t think I have seen those in Canada. Can you tell us what seasonings were used?
