I made this last night and it was the best baked chicken I've ever eaten. No innards in my organic chicken but the neck is the only thing I've ever used and that was to make a clear gravy using cornstarch. I quartered an onion & added it to the lemons & garlic cloves I used to stuff the cavity. I followed your directions on the skin. I had crispy skin that was delicious.. Baked until it hit 165 degrees which was about 90 minutes. (Chicken weighed 5.5lbs). This chicken came as a two pack. We brined the first chicken and it was delicious. I didn't expect this baked chicken to be as moist and delicious but it was every bit as moist & delicious as our first brined chicken. Thank you for a new item to our menu rotation.

Today, I followed this instructional video to the letter. I did add some poblano peppers fresh out of the garden. Decided after dinner, I should have peeled the pepper skin first, or leave them out. I’ve made this twice now. It was excellent both times. The chicken was juicy and fall off the bone and the vegetables were caramelized and delicious. I added some other ingredients like sweet potato and asparagus. You won’t regret trying this recipe.

One thing I would add, I pour butter and garlic in-between the skin and meat of the bird. It makes it super moist and kicks the flavor up.

@@Natashaskitchen it was soo good! The flavors were very tasty, but I tried reducing the cooking time since mine was smaller.. it still did not come out as juicy as yours did,however☹️ I think it was slightly over-baked. I need a cooking time chart for different sized chickens.

I guess I'm old school, I use the gizzard, heart, kidneys (of course depends on the animal for which organ is with it) all except for the liver (that usually goes to the dogs, unless they don't want it either, which does happen. LOL) great videos, BTW, Thank you!
I made this a few months ago and absolutely loved it, it was so moist and flavorful.
