Ah, seeking a quality sound does suggest you will be better matched with the Sony ES subs. Two of the XS-W124ES subs will pull all the power your amp has to offer so you get the loudest and strongest bass of the ES models.
A pair of those are not quite as good a choice as the Sony XM-1ES is not 1-ohm stable. You could wire two of the 2-ohm subwoofers in series (4-ohms impedance total) but that would only provide 300-watts per speaker and less bass impact and performance. They are identical speakers other than the impedance, so a pair of the 4-ohm XS-W122ES subwoofers is the right move with your XM-1ES amp.

It will probably be best to go with the XS-W124ES then, because if you add a second later on you have a wider margin for matching the right amp with the right amount of output for either one or two.
