Ingredients
800g chicken breast, diced (1.75 lbs)
3 tbsp light soy sauce
2 tbsp Shaoxing cooking wine
1 tsp white pepper
1 egg white
5 cloves garlic, finely grated
1 tsp chicken bouillon
1 tsp rice vinegar
3 tbsp honey
150g cornflour (cornstarch in the US) (5.3 oz)
150g rice flour (5.3 oz)
1 tbsp baking powder
Oil for frying
Rice, to serve
Spring onions, to serve
White sesame seeds, to serve
Method
1. Marinate the diced chicken breast with 2 tablespoons of light soy sauce, 2 tablespoons of Shaoxing cooking wine, white pepper, and the egg white. Mix well and leave in the fridge for one hour.
2. Fill a wok or large frying pan half full with oil and heat to around 180°C (350°F) for deep frying.
3. In a bowl, mix together the cornflour, rice flour, and baking powder. Season with salt. Place some marinated chicken pieces into the flour mixture and coat well.
4. Once the chicken is coated, carefully lower it into the hot oil and fry until golden brown and crispy, about 6 to 7 minutes. Remove from the oil and place onto a wire rack to drain.
5. In a bowl, mix together 1 tablespoon of light soy sauce, 4 tablespoons of water, grated garlic, chicken bouillon, rice vinegar, and honey. Stir well until everything is dissolved.
6. Once the chicken is fried, remove the oil from the wok and place it back on the heat. Add the sauce you just made and bring to a simmer.
7. Once the sauce has been simmering for one to two minutes, add the chicken back to the wok and coat well in the honey sauce. Toss the chicken carefully to evenly coat in the sticky sauce.
8. Place the chicken into your serving dish and garnish with some white sesame seeds and spring onions. Serve alongside steamed white rice.

You answered your own question lol, he doesn't have a network TV deal specifically BECAUSE he's an amazing chef. Food personalities on TV are usually likable home cooks w/mediocre skills making basic food.
In contrast, Andy is a real chef w/professional skill, who creates memorable dishes & is beloved by his audience.
As a result, I'm confident Andy's channel, through the combination of YT revenue, affiliate commissions, merch sales & misc. sources, makes him at LEAST 5x the income he'd make from a TV network deal.
Things have changed from even 20 years ago, as food networks were the only way for a talented food personality to build an audience.
Yet now, esp. bc Andy already has a huge audience, a TV network deal would just mean having to drive to a studio & take orders from higher-ups to earn a fraction of the revenue you generate.
Instead, Andy works from home w/his wife while remaining beholden to no one, which is a pretty sweet deal if you ask me 👍👍👍

Next time, velvet your chicken. You don’t need baking soda, but you will need salt, pepper, water, shading wine or any cooking wine, oyster sauce, egg, and corn starch. Let that 1/3 cup of wage and pepper mix for about a minute and add your salt. Afterwards, add your chicken and just let it soak in that water bath for 1 minute. Add your other ingredients, making sure the egg and corn starch are last. I would put sesame oil as a last touch, but some people are allergic to it. If anything, add neutral oil. Let that marinate for about 20-30 minutes room temperature. Coat in your batter powder and deep fry. Your chicken will be very tender and moist inside. I personally love baking soda with chicken breasts because it makes it super tender. You don’t even need a ton of it. 1/2 teaspoon is good for 1 lb of any meat.

@@shortfuse9443 If it's made like sweet and sour pork, then it is probably the sauce that is American. They're are variations in the sauces used when coating the pre-fried meat. I have seen fresh strawberries, dried plums and hawthorn berry used over here
@@SuperKendoman it’s fried and cooked in a sweet and spicy sauce. The sauce is made from chilis, sugar (sometimes honey), and soy sauce, with other stuff mixed in that I can’t remember now
