I am in South Africa and have not cooked Tripe & Trotters for over 30 years. My wife is from Southern Siberia & my daughter now 16, was born in UB, Mongolia. I hope that I do it right and don't have to eat 2Kg.'s of it by myself. 🥴
According to what I have seen and heard regarding the making of trotters and tripe curry everybody claims to make the best so you judge my idea I also always add oxtail also but more important for me I can't eat this dish anywhere in South Africa other than I prepare and make it myself , just can't stand the sight of the hair on the trotters no matter how well it can be cleaned it's like when it's cooked hair always seem to expand to the top so my idea is to cut the skin just below the root of the hair ,yes not the whole skin ,this is my promise good food take time,but you all out there will never eat trotters that look like beard ever again, just try it . methodology is to put it in freezer first then cut wit sheetknife that builders use longblade ,yes I everytime buy new blades.
